Asun – Peppered Goat meat

Hi guys! how was your weekend? Hope great. Mine was funtastic!!! i made asun at home which i served alongside banga rice and it was “da bomb”. If you haven’t tried it before now, you’re really missing alot. The smokey spicy flavor of the meat is definitely what makes it irresistible. Asun, a popular favorite in the western part of Nigeria is one sure attraction you can’t miss at parties especially in the small chops section. Asun which simply means “smoked” in yoruba language is a spicy bite sized appetizer made from smoked/grilled or roasted goat meat. It’s usually served mixed with pounded or ground pepper and can be classified alongside other appetizers. what more can i say…here’s how to make it at home.

Directions:::

Step 1: Pound or Blend the peppers roughly. Typically when the pepper is ground, you’d still see the seeds.

Step 2:
Outdoor Grill/Smoker Method
Separate the bones from the goat meat with a sharp knife and rinse the meat. Place the meat on the grilling rack and brush over with the cooking oil then sprinkle with salt taste.
Leave to Grill/Smoke for about 45 minutes while checking and flipping over constantly till the meat is thoroughly cooked. This stage is best done using charcoal grill.

Oven Method
If you don’t have a grill, you can also use an oven. Place the washed goat Goat meat in a bowl. Add salt to taste,onion blend with crushed seasoning cube. Mix to combine then place in the fridge. Leave to stand overnight. Place the marinated goat meat on a pre-heated grilling rack. Brush some vegetable oil over it and leave to grill while turning it constantly. Pre-heat the oven, Grease a pan with vegetable oil and place the goat meat from the night before in the pan and place in oven for 45-50 minutes.

Boiling Method
Wash the goat meat and place in a pot. Add salt to taste, garlic, scotch bonnet pepper and onion blend with crushed seasoning cube. Add a little water then leave to cook for about 25 minutes making sure all the stock is absorbed. Transfer the cooked meat to a grill, brush some oil over it and leave to grill further on both sides while turning it constantly. This is to ensure it’s well cooked and dries up.

Step 3: Check to see if goat meat is soft then take it out and chop into smaller bite sizes with a knife.

Step 4: Pour the chopped spiced goat meat into the pan. Add the crushed seasoning, salt to taste and water. Toss everything together andlet it cook for 10-15 minutes. Add the ground peppers into the pan and mix. Cover the pot and leave to cook for 15 minutes or till the liquid dries up in the pan. Add the Sliced onions and green bell pepper, cover and leave to simmer on low heat for 5 minutes and your Asun is ready.

Turn off the burner and serve alone as an appetizer or as a side with rice, boiled/roasted plantain or yam.
