Avocado mint ice cream

Avocado ice cream needs no introduction. It’s a popular kind of ice cream made with Avocado. It’s rich,  creamy, delicious and the perfect treat for those hot days. It’s also very easy to make and guess what? You don’t need any ice cream maker for this. To add a little twist to this, I added mint syrup which greatly improved the flavour. Without further ado, let’s get started.

This easy to make ice cream made with Avocado is rich, creamy, delicious and the perfect treat for those hot days. 

Ingredients

  • 3 Cups Cooking Cream
  • 1 Cup Sugar
  • 3 Medium Sized Avocados
  • 3 Tbsp. Mint Syrup

Instructions

  1. Step 1: Rinse the Avocados then slice open.  Remove the seeds and Scoop the inner part of the Avocado into a food processor and puree into a smooth paste. If you don't have an electric appliance, you can simply mash it up with a fork.  Set this aside. 
  2. Step 2: Pour the cooking cream into a bowl and with an electric mixer, whisk it you get stiff peaks while adding the sugar gradually.  Add the pureed Avocado and mix some more, then transfer the mix into a freezing bowl. 
  3. Step 3: Cover with a cling film and place in the freezer. Leave to freeze for 6-12 hours before serving.
  4. Step 4: Serve in a bowl or on waffle cones. garnish with mint leaves.
