Coconut rice is a very popular dish in most parts of the globe. From the different varieties, I’ve prepared so far such as; Brown coconut rice to Coconut rice made with goat meat, to Coconut rice made with prawns, to Coconut rice made with shrimp and even Jollof coconut rice, it’s no surprise when I say it’s also a favourite.
In the south-eastern part of Nigeria, coconut rice goes by a different name…Edesi Isip which translates roughly to coconut rice “Edesi means Rice while Isip means Coconut. This dish is very common in Efik/Ibibio speaking parts of the country and it’s also prepared differently. What makes this dish different from other coconut rice dishes? Well, One sure thing you’ll notice with Calabar/Efik delicacies is their love for seafood. From prawns to periwinkles to ….you name it. Today, I will be showing you how to make it the south-eastern way. Enjoy!
