Have you guys had mushrooms with cauliflower yet? There’s a way i usually make it at home and it’s really Yummy! Mushrooms don’t get as much attention as they should here in the country. Even though they are more of a fungus rather that a vegetable, the edible ones are often very nutritious and tasty. “Ero” means mushroom in igbo and we’ve got lots of it here in Nigeria.
Some of the popular ones are; simple button mushrooms which i used Here, oyster mushrooms as shown in this post, wood ear mushrooms (ero belebelenti) which i used Here, shiitake mushrooms, chanterelle mushrooms and a host of others. Many of them are good sources of selenium, potassium, riboflavin (vitamin b2), niacin (vitamin b3) and pantothenic acid (vitamin b5). Cauliflower on the other hand also don’t get much attention too. It’s quite similar to cabbage and can be roasted, boiled, steamed, fried or eaten raw. While it’s high in Vitamin C, It’s low in fat, protein, carbohydrates and dietary fiber.You could check out this light cauliflower stew with button mushrooms i did a few years ago
