Fried rice is a classic nigerian dish which is very appetizing and highly nutritious because of the numerous colored vegetables contained in it. It could also be garnished with vegetable salad.
Ingredients
*Whole fish (seasoned and fried or grilled)
*Chicken stock
*3 cups Rice
*1 bulb, Onions
*2 tbsp Curry
*1/2 tsp Thyme
*2 Seasoning cubes
*Vegetables: finely chopped or diced-Carrots, runner beans, green peas,chilli pepper, green pepper, spring onions, onions, sweet corn
*3 tbsp Vegetable Oil
*Lettuce&lemons for garnishing
*Salt to taste
Directions
-Wash the rice with very hot water
-With the stock, cook the rice with the seasoning cubes, onions, curry&tyme(this gives it the distinct yellow colour) and salt till it is almost soft
-In an empty pot, add the vegetable oil and stir fry the finely chopped or diced-Carrot, runner beans, green peas,chilli pepper, green pepper, onions,sweet corn.
-Stir fry each portion of veggies with the portioned rice in a non-stick pan, vegetable oil and onions
-Taste and adjust the seasoning with salt,maggi and pepper, if necessary
-Serve with the fish spread with tomato sauce and garnish with Lemons and lettuce for optimum taste.
