I’m a tea person and I always try to explore new ways to enjoy my tea in the mornings before heading out. Now what better way is there to enjoy tea other than with homemade cookies. Even kids would love to take homemade cookies to school don’t you think???. I did as a kid, and back in the day whenever momma had time to make cookies it was always a delight to the fam. She always prepared the cookies ahead of time and when it was time to pack our lunch boxes, she’d simply place it in a special spot with a pack of juice…..away from the “Real meal” which we never bothered about cos it was always cold whenever we were ready to eat…lol. Apart from being simply delicious, it’s also pretty affordable and really easy to make as you are about to find out.
•Prep time: 20 minutes
•Bake time: 45 minutes
•Total time: 1 hr. 5minutes
•Makes: 14 ginger bread cookies
Ingredients:::
• 180g Granulated sugar
• 1 Egg, whisked
• 1 tbsp.Ground ginger (Powdered)
Directions:::
Step 1: Beat the butter and sugar in a bowl till it turns pale and fluffy. Beat in the whisked egg gradually.
if it still has granules, beat some more till it dissolves
Step 2: Sift the Flour and ginger into the mixture and gradually mix with a spatula till a fairly firm dough is obtained. It shouldn’t stick to your finger when you touch it.
Step 3: Roll the dough into small balls like the size of a walnut with both hands.
Step 4: Place the rolled dough on a baking sheet spaced apart (To give room to expand). With a spoon, press the rolled dough down a little so it’d look like thick discs
Step 5: Bake in an oven at 150◦c (300◦ F) for 40- 45 mins till crisp and lightly browned. Remove and place on a wire rack to cool.
Serve with your favorite beverage
