INGREDIENTS:::
- 2 cups cooking oil
- 300g spaghetti or your favorite pasta

1 cup tomapep puree
- 2 tbsp. Tomato paste

1 tsp. Thyme
- 1 tbsp. Onion powder
-
1 tsp. Curry Powder
-
1 cup Cooking Cream
-
Salt
-
Fresh basil for garnish.
DIRECTIONS:::
Step 1: In an empty frying pan, heat up the cooking oil. Gently add the meatballs and fry till golden brown on all sides. This locks in the flavor and gives a nice crust. Remove the meatballs from the pan, then reduce the cooking oil in the pan, leaving just a little.
Step 2: Add the tomapep puree into the oil and stir fry for about 3 minutes. Add tomato paste and stir-fry for an additional 5 minutes. Next, you add the seasonings like thyme, onion powder, curry powder, salt, and seasoning. Give this a good mix and add water. Cover, and let it simmer on low heat for about 10 minutes.
Step 3: At this point, you can reserve some of the sauce in a bowl for a later time, so you wouldn’t have to start from scratch next time. Add the cooking cream and mix, then add the cooked meatballs. leave to simmer on low heat for 5 minutes.
Step 4: While the meatballs cook, boil your pasta in salted water according to package instructions. Drain and toss with a drizzle of cooking oil to prevent sticking.
Step 5: Add your pre-cooked pasta and toss to combine. Garnish with parsley or basil and serve. Pile up your pasta, top with those saucy meatballs, sprinkle on parmesan, and add fresh basil. And there you have it — comfort food perfection! Enjoy!
