How to make palm oil stew

Top of the Day to you all :). Hope you’re having a wonderful weekend. So i woke up this morning with a strong Craving for Palm oil stew and after the early morning service, i scurried to the market to get ingredients for this native dish. Palm oil stew is a traditional stew which is quite popular in the villages and road side food hawkers. As a classic Nigerian dish, it is referred to as “Alapa” and it is highly nutritious due to the nutrients in the tomato puree and the high level of Beta carotene contained in palmoil. Alapa can be enjoyed with rice, Beans (Agoyin in my favorite), Fries i.e plantain, potatoes, yams and just about anything


Nigerian Palm oil stew recipe
• Prep Time:  
15 minutes

• Cook Time: 40 minutes
• Total Time: 55 minutes
• Region: Nigeria, Africa

Ingredients:::
• 3 Cooking spoons of Palm Oil
• 7 medium sized fresh tomatoes
• 6 medium sized chili pepper
• 4 Red Scotch bonnets (Red pepper)
• 1 medium sized onion
• 4 garlic cloves 
• 1kg cubed Beef/ chicken (Stock fish could be used instead of meat)
• 2 Seasoning Cubes 
• Salt to taste


Procedure:::

Step 1: Blend the fresh tomatoes, peppers, garlic and onions together. Boil in a medium sized pot till all the water evaporates leaving just the puree.

Step 2: Place the pieces of meat (or stock fish) into a clean pot and slice one onion into it, Season with Maggi and salt then cook till tender for about 15mins

Step 3: In a dry pot, Heat the palm oil (Make sure the kitchen is well ventilated to avoid smoke inhalation) for about 5 minutes till the oil becomes clear almost like vegetable oil but a little bit darker. This process of heating the palmoil is called bleaching.

Step 4: Add the tomato puree and stir consistently for about 5 mins.

Step 5: Finally, Add the meat stock with the meat inclusive and stir thoroughly then allow to simmer for about 10-15mins.

Step 6: Remove from the burner and serve with Rice or yam. It can also be eaten with Okra or ewedu soup and served with any form of “Swallow”
