Kenkey with peppered sauce on street foodie waka

Kenkey is a popular staple food in ghana. it’s made with fermented corn dough. As i learnt, the method of preparation is quite tasking as it takes a while to get ready since it involves a range of processes such as fermenting, kneading and steaming.

The traditional way of preparing this meal in Ghana is by steaming the kneaded fermented corn dough ball wrapped in dry corn husks or plantain leaves. To get the real picture, it’d look and feel almost like fufu once ready. It’s usually served with Stew, Soup or with fried fish & ordinary peppered sauce or shito (Ghanaian dark red sauce). It tastes really sour but the combo with Shito or peppered sauce reduces the sour taste. I enjoyed mine with peppered sauce & seasoned prawns and ate with my fingers and it was really nice. Hope to try it out once more :).
