Mackerel egg stew is a quick and simple dish which could be made by anyone and can be enjoyed with almost anything from rice, yam, plantain, potato or even bread. • 1 medium sized smoked mackerel fish
• 7 medium sized eggs
• 1 cup tomapep puree
• 1 medium sized onion, chopped
• 1 seasoning cube, crushed-Optional
• salt to taste
• 4 tbsp. cooking oil

Directions:::
Step 1: The first step is to prep the fish by rinsing and removing the bones within. Once this is done, mash the fish and set aside. Next, crack the eggs into a bowl and set this aside.
Step 2: Next, heat up the cooking oil in an empty pan for 1 minute, then add the chopped onion. Stir fry for 2 minutes before adding the tomapep puree. Stir and leave this to cook for 3 minutes before adding the mackerel fish.
Step 3: Season with the salt and crushed seasoning then leave to cook for 3 minutes. Gently stir in the eggs till you get your desired consistency.
Serve!
