I have a theory, that once breakfast is good, the rest of the day goes on perfectly well. Our very own Naija toast is one good way to bring stale old bread back to life. This is a recipe adopted from the popular french toast using Agege bread. If you’re confused on what to have for breakfast then look no further. This recipe works best if you’ve got old dry bread although you can use any type of bread you want. The theory applied to Naija toast is simple. Hard agege bread is dipped into a mixture of milk and eggs then pan fried with butter and served with a syrup by the side…Straight forward isn’t it?
Ingredients:::
• 4 tablespoons butter/ Margarine (preferably butter)
•2 eggs
•1 cup milk
•1 tablespoon sugar
•1 medium sized agege bread
•1/2 teaspoon vanilla extract – Optional
•1/4 teaspoon ground nutmeg – Optional
•1/2 cup syrup, warmed e.g pancake/simple syrup
Directions:::
Step 1: Cut the Agege bread into equal thick slices.
Step 2: For this step you’d need two separate bowls. In the first bowl, mix the milk, vanilla and sugar together then set aside. In the second bowl, whisk the eggs and nutmeg, set aside briefly.
Step 3: Heat the butter in a medium sized pan over medium heat. Dip bread in the milk, on both sides and immediately dip in the egg mixture and coat both sides.
Step 4: Transfer immediately to the frying pan and fry till golden brown then flip and cook the other side till golden brown also.
Serve with warm syrup.
