The basic pancake Nigerians are used to comprises of the normal pancake batter with a little bit of onion, pepper and sugar. My mum used to make it a whole lot when my siblings and i were quite young and it was always a hit every time with hot or cold beverage plus, it was an easy breakfast she could quickly whip up before heading to work. i remember back then, we’d sit around the kitchen with our plates in our hands waiting eagerly for momma to drop the hot pancakes in our plates. We also made sure we dug into the pancakes in the kitchen so we could ask for more once we had cleared the ones in our plates….lol!

How to make Nigerian style pancakes from scratch
Prep Time: 10 mins
Cook time: 30 mins
Makes: 12 Pancakes
Step 2: Sieve the flour in a separate medium sized bowl. Dissolve the powdered milk or dilute the saturated milk in the cup of water. Make a well in the middle of the flour and pour in the milk. Mix till you get a smooth batter.
Step 3: Gently add the whisked eggs, sugar, salt and mix to get a smooth runny batter (The more milk/eggs you add, the thinner your pancakes would turn out)
Step 4: Add the chopped pepper & onions, mix to incorporate.
Step 5: Heat a non-stick frying pan and add a trace of butter/margarine or vegetable oil ; Spread evenly over the cooking surface.
Step 6: Pour in two cooking spoons full of the batter and swirl to spread evenly. Cook for 1 minute and flip over for a further 30 seconds.
Step 7: Transfer to a flat plate and repeat the process till the batter is used up.
Serve Hot with any beverage.
