Over the past weekend, i spent the better part of my Saturday making bread rolls for the coming week. That way, i’m able to determine what goes into my food as well as eat healthier. By the time i was done with baking the first batch of bread i had already started feeling off. This usually happens when i’m fagged out and famished. To satisfy my hunger, i treated myself to this tasty low-fat sandwich with one of the freshly made hot bread rolls with chilled zobo drink. Although prawns could be really expensive when compared to other seafoods sold in the market, it’s best to start including it in your diet. Prawns are considered to be one of the healthiest foods in the world with an excellent source of high-quality protein and several important vitamins and minerals that support good health such as omega 3 fatty acids and a great way to get iron, zinc and vitamin E.
How to make Oporo sandwich

Ingredients:::
• 14 medium sized oporo “tiger prawns” – Fresh (Not dried)
• 2 tbsp.corn meal
• 1 tbsp. all purpose flour
• ½ tsp. powdered pepper
• ¼ tsp. curry powder
• salt to taste
• 2 cups oil for deep frying
• 2 bread rolls
• 6 thin tomato slices
• 4 lettuce leaves
•1 small carrot – grated
• Salad cream
Directions:::
Step 1: In a small bowl, Combine the Corn flour, all purpose flour, pepper, curry and salt together. Add about 3-4 tablespoons of water to make a thick slurry – Set aside
Step 2: Remove the prawn head, shell and black vein in the belly area. This is very necessary in order to expose the fleshy part under the shell. Rinse with clean water and immerse in the slurry making sure every part is coated evenly. Drop the coated prawns in pre-heated oil and fry till golden brown. Remove and drain on a paper towel
Step 3: Sandwich the lettuce, grated carrot, hot prawns, sliced tomatoes and salad cream between the bread rolls and serve immediately with hot or cold beverage.
