Ingredients

  • • 1/2 kilo chicken
  • • Salt - to taste
  • • 1 teaspoon Thyme
  • • 1 teaspoon Curry powder
  • • 2 Seasoning cubes - crushed
  • • 1 teaspoon Nutmeg
  • • 1 cup tomapep (tomato & pepper) puree.
  • • 3 cups Cooking oil - for deep frying
  • • 1 small Onion
  • • 1/3 Cup Tomato Paste
  • • 1 Cup Chicken Stock

Instructions

Step 1: Place the chicken into a medium sized pot. Add salt to taste, thyme, curry powder, crushed seasoning, nutmeg into the pot. Cover and leave the chicken to cook in its juice for 5 minutes. Add water and leave to cook for 10 more minutes.

Step 2: Pour the cooking oil into a frying pan. leave to heat up for 2 minutes. Fry the cooked chicken till golden brown the remove from the oil and drain.

Step 3: Reduce the oil in the pot and place back on the burner. Add the chopped onion and tomato paste. Stir-fry for 2 minutes. Gently add the tomapep (tomato & pepper) puree. Stir fry for 3 minutes before adding the chicken stock. Leave to simmer for 5 minutes.

Step 4: Finally, Add the fried chicken and mix everything together. Leave to simmer for 1 minute before turning off the burner.

Serve!

Notes

• You can make your tomapep puree before making this and the taste of your chicken would depend on your puree mixture. • You could add ginger or garlic to make the taste unique and different
