Peppered Kpomo (Ponmo Alata Sue Sue)

Peppered Ponmo a.k.a Kpomo Alata Sue Sue is a delicacy which is bound to set the mood right any day. It’s a dish made with cow skin, locally known as Kpomo, Ponmo or Kanda, mixed with hot and spicy peppers.

It’s is a beer parlour/ local bar favorite which is usually eaten as an appetizer, something to chew on while you sip your chilled drink at the spot. Believe me when i say, this has the ability to set both the front and back door on fire so eat sparingly.

Ingredients:
10 medium sized Cow Skin (Kpomo /Kanda/Ponmo)
5 Medium sized Scotch Bonnet – 

• 5 Medium sized Chili pepper

1 Onion Bulb
• 2 Seasoning Cubes – Optional
•  Salt to taste
• 1/2 cup cooking oil (vegetable or palm oil)

Directions:::
Step 1: Rinse the peppers thoroughly and place in a grinder. Grind roughly and set aside. 
Step 2: Place the cleaned cow skin (Kpomo) in an empty pot. Add water and salt to taste then cover and leave to cook for about 30 minutes till soft then drain off the water and set the cooked kpomo aside. 

Step 3: Place the pot back on the burner and add the cooking oil. Leave it to heat up for 1 minute then add the chopped onion. Stir fry for 2 minutes then add the ground peppers, salt to taste and crushed seasoning. Stir and leave to fry for about 10 minutes on low heat while stirring consistently. 

Step 4: Add the cooked kpomo and stir to combine everything together. Leave to simmer for 3 minutes on low heat and your peppered kpomo is ready. Garnish with chopped green bell pepper and onion. Serve!
