PERI PERI or pili pili is a kiswahili (Swahili) word which means spicy or pepper chili. It’s made by marinating chicken in the popular peri peri sauce before grilling. It’s quite popular on most restaurant menus across the African continent. It’s really easy to make and requires just few ingredients, including the sauce. It can be served with roast corn, chips or as a side with any meal.
Please Note: If the sauce mistakenly gets into your eyes while eating the chicken, just remove the eyes 😂….no need to wash

• Salt to taste
•½ cup cooking oil

Directions:::
Step 1: Clean the chicken properly and place in a bowl or ziploc bag. Add the salt to taste and the peri peri sauce, then mix thoroughly.
Step 2: Place the bag or bowl with the chicken in the refrigerator and leave to marinate for 5 hrs or overnight in the freezer.
Step 3: Pre-heat the grill and place each chicken on the grilling rack with the skin side down first. Grease with the cooking oil and grill for about 20 minutes over medium heat till the juices run clear. Flip over and coat with extra oil and peri peri sauce.
Place back in the grill and leave to cook further for about 15-25 minutes making sure you check once in a while to ensure it doesn’t char. Your chicken is ready once the juices run clear. Serve with grilled corn, fries, salad or rice.
