Plain Okra soup with Stew

Okay, it has happened to all of us before. You have different stews in your freezer but you’re not in the mood for rice, yam, plantain, potato and all the other stuff that goes with stew but “Swallow” and you don’t have any soup. Well, that’s where this soup comes into play.
In actual fact, when i don’t feel like spending more than 10-15mins in the kitchen making the typical Nigerian soup this always comes in handy and it never disappoints. Have you noticed, the tastiest meals are the meals prepared with less fancy ingredients in a short amount of time? These are actually the meals the fam would always plead with me to replicate and when i try to do the magic once more especially with more ingredients, it loses that effect it once had. Plain okra soup is the quickest soup you can rustle up in your kitchen and in no time, you’d have a decent meal waiting to be served. You can serve it plain or with any tomato/pepper based stew but it’s best enjoyed with one that also has palm oil as it’s base such as smoked panla fish stew.

How to make Plain Okra soup
• Total time:  Less than 20mins
• Serves :      3-4
• Misc :         Serve Hot with Stew (i.e; Panla fish stew)


Ingredients:::
• 10 medium sized Okra “Lady fingers”
• 1 cup Stock (Chicken/Beef/Fish or a mixture) – I Used fish stock
• 1 tbsp. Crayfish
• 1 Seasoning Cube
• Salt to taste

Directions:::
Step 1: Wash the Okra with clean water. With a grater, Grate the Okra. Grating okra makes it “draw” more unlike when you chop it with a knife. 

Step 2: Transfer the grated okra into a small pot and add the Stock, crayfish, seasoning cubes and salt to taste.

Step 3: Leave to cook on medium heat for 10 minutes and you’re done cooking.

To serve, simply dish out a portion of the okra soup into a bowl, add the Smoked panla fish stew (Or any stew but preferably one with tomato & palmoil base) and serve with your favorite swallow.
• Nutritional Information: Okra soup makes a perfect meal for diabetic patients. It helps in normalizing the blood sugar and cholesterol level. This is due to the mucilage and superior fiber which helps in curbing the rate at which sugar is absorbed from the intestinal tract. Also, it aids in weight loss. Another alternative for diet for diabetics is to cut off the ends of about two Okra then slice open the middle. Soak in a cup of water and leave overnight at room temperature. Drink the water first thing in the morning on an empty stomach. Doing this for about 3months helps reduce the fasting bg reading of a diabetic.
