Got overripe plantain sitting pretty somewhere? A good way to put it to good use is by making this tasty local delicacy called Ukpo Ogede (Plantain Moi Moi). The Ingredients you’ll need are:::

Plantains ( Ripe and Unripe), Fish (I used “Titus”), Onion, Fresh pepper, and lots more

 

Directions:::

Step 1: Peel off the plantain skin and place the plantains in a blender. Add just a little water to enable the blades of the blender to move and blend till smooth

Step 2: Place the rinsed mackerel in a pot. Add chopped onion, salt to taste, and water. Cover the pot and leave to cook for five minutes.

Step 3: Remove the fish from the stock and de-bone. Once done, shred the fish and set it aside.

Step 4: Pour the blended plantain into a medium-sized bowl. Add the shredded fish, fresh pepper, crayfish, fish stock, and seasoning. Mix to combine.

Step 5: Line your baking cups with leaf and pour the mixture into the cups. Cover the mix with leaves and place the cups into a baking dish. Pour water into the dish and place in a pre-heated oven. Bake for about 30-45 minutes till a toothpick inserted comes out clean.

Serve!

  • 1/4 cup Crayfish
  • 2 Seasoning cubes
  • Salt to taste

Notes

1. When exposed to air, plantain tends to turn black quickly especially when blended. To prevent this from happening, it's best to blend when you're about to make this dish. Also, using a combination of unripe and ripe plantain tends to reduce this effect.
