Start the day right with this lovely breakfast: Scrambled eggs served with Boiled Irish Potatoes and you’d sail through the day like the pro you are.
Have you ever tried adding milk to eggs and scrambling? i have two words to describe it…..simply Amazing!!!.

I recently got a box for Christmas from peak to make my favorite breakfast and believe me, it turned out absolutely delicious.  Here’s how i made it.

Potato & Eggs is such a great way to start the day..

Ingredients:

• Peak Full Cream Evap Milk
• 6 Irish Potatoes
• 4 Eggs
•1 Onion
• 1 Tomato

• Spring Onions
• 1 Seasoning Cube
• Salt to taste

Directions:::

 

Step 1: Peel & Boil potatoes in salt water till done

Step 2: Chop and dice tomatoes, fresh pepper and onions. In a pan, add some oil and pour in the onions. Saute till translucent then add tomatoes and cook for 1 minute. Add the salt and seasoning

Step 3: Crack the eggs and whisk in a bowl with peak full cream evaporated milk. Pour into the tomato sauce then scramble.

Garnish with chopped spring onions and serve with potatoes.
