Hope y’all are having a wonderful cold weekend Cos i sure am. Yesterday, i made a quick stop at the ancient city of Badagry to visit my good friend kareema. After chilling for a while, we decided to do a little Shoe shopping (Gosh! The prices are ridiculously cheap over there…..full details later 😉 ) and during the little shopping break we decided to stop by a Tapioca joint cos i had told her earlier on that i had never tasted tapioca.
We ordered for two plates (in take away packs) since i was too shy to eat there – the joint was packed with lots of men and women (Mostly traders). By the time i got home, The tapioca had gone cold so i had to reheat it.
The physical appearance of tapioca looks quite similar to pap/starch except that it’s got a more translucent and grainy look like it’s got granules in it. Tapioca is the starch extracted from the Cassava tuber and after the extraction, the starch is further processed into several forms such as soluble powder, Spherical pearls/ Seeds, rectangular sticks or coarse flakes. The tapioca pudding in the pictures was prepared with the Pearls/Seed tapioca. It was cooked in water, coconut milk with a little salt and later sweetened with honey. I added saturated milk & roasted groundnuts to mine – it was simply delicious :). I hope to see it in the stores so i could buy & show you how to prepare tapioca from scratch.
