Cat-Fish Banga soup is simply love in a bowl. This is a dish i simply cant get enough of. When paired with starch and served in the traditional local clay bowl known as evwere, total bliss.
I am also a huge fan of catfish especially in banga soup. If i had to choose between banga soup with meat or banga soup with fish, i’d go for the latter and here’s why…it’s easier to pinch through the whole fish while “swallowing” lumps of starch. Also, the flavors from the fish mixed with banga juice cannot be ignored. Banga soup is a tasty soup made from the juicy pulp of the palm fruit not palm oil. It’s usually prepared with special spices and can be made with meat or fish.

Ingredients:
• 1 medium sized fresh catfish-cleaned
• 1 medium sized dry catfish
• 5 cups banga juice
• 1 Cooking spoon Crayfish, Ground
• 2 medium sized Dry fish / Smoked Fish
• 2 tbsp. chili pepper – ground
• 1 tbsp. Banga spices
• 1/2 Cup Dried Beletientien leaves (Also called atama leaf in Efik) – Crushed
or
Dried Bitter leaves – Crushed
or
Dried Bitter leaves – Crushed
• 2 Seasoning cubes. Crushed- Optional
• Salt to taste

Step 1: The first step in the preparation of banga soup is to prepare the spices you’d be adding to the soup. To learn how to do that, follow this link

Step 3: Prepare the smoked/ dry cat fish by opening it up from the middle. Remove the bone and gut then soak in hot water to soften for 10 minutes before rinsing with clean water. Rinse and set aside.
Step 4: Prepare the fresh cat fish by cleaning it thoroughly as shown in this tutorial on how to clean catfish. Once its cleaned, place in a pot and add little water and sprinkle wit salt and leave to steam for about 5 minutes.
Step 5: Pour the extracted palm nut liquid in a medium sized pot.
Step 6: Add the dry cat fish, banga spice, pepper, salt to taste, seasoning, ground crayfish and whole oburunbebe stick. Stir and leave to cook with the pot covered for about 15-20 mins till the palm oil rises to the top.
Step 6: Add the beletientien leaves into the pot of soup, Stir and leave to simmer for 5 mins. Once the soup is done, discard the Oburunbebe stick.
