Recently, I felt like eating coconut rice and going by the past coconut rice recipes such as; Prawn coconut rice, Brown coconut rice, Shrimp coconut rice, coconut jollof rice, and the one a bowl of only Classic coconut rice, I figured it’d be great to try new flavours hence this tasty new addition…Goat meat coconut rice. Goat meat has a rich intense flavour which definitely added a unique twist to this tasty dish. Now before we begin the preparation process, you need to get your main ingredients ready and this includes Coconut milk. You can learn how to extract coconut milk here for a start. Once that’s done, let’s get cooking.
The Ingredients you’ll need are;
Goat meat, Garlic, Onion, Seasoning, Salt, Cooking Oil, Rice, Coconut Milk, fresh pepper, Green Bell pepper, Carrots, Green beans, Green peas
Goat meat coconut rice
Goat meat has a rich intense flavour which definitely added a unique twist to this tasty dish.
Ingredients
- 1 kilogram Goat meat
- 6 Cloves Garlic
- 1 Medium Sized Onion
- 2 Seasoning Cubes, Optional
- Salt - To taste
- 3 cups Cooking Oil - for deep frying
- 3 cups Rice
- 2 Cups Coconut Milk
- 2 medium-sized fresh pepper
- 1 medium-sized Green Bell pepper
- 3 medium-sized Carrots
- a handful of Green beans
- 1 cup Green peas
Instructions
Step 1: Place the Goat meat, Minced Garlic, Chopped Onion into an empty pot. Crush the seasoning over the top and add salt. Pour water into the pot, just enough to cover the content of the pot then cover. Leave to cook for about 45 minutes till the meat is tender. Remove the meat from the goat meat stock and set aside.
Step 2: Pour some oil into an empty pan and leave to heat up for 1 minute. Once it gets hot, fry the cooked goat meat in the oil till it browns up. remove the meat from the oil and set aside.
Step 3: Rinse the rice pour into the pot containing the meat stock. Add the coconut milk, seasoning and salt to taste. Cover the pot and leave till the liquid in the pot dries up and the rice is tender.
Step 4: Add the chopped pepper, Sliced carrots, green bell pepper, green beans and boiled peas. Stir, then cover and leave to steam for 3-5 minutes. Add the fried goat meat into the pot and your meal is ready. Serve!
Notes
- The main coconut rice doesn't need the addition of crayfish
