Pizza is fast becoming a rave here in Nigeria with pizza shops opening up here and there. Although it doesn’t come cheap, it’s definitely worth every penny. Well, you don’t have to break the bank to enjoy this tasty snack at home. On first thought, I wanted to make this post about pepperoni pizza but on getting to the supermarket where pepperoni sausages are sold I noticed they had run out of pepperoni so I went for the next available option known as chicken franks. Don’t get me wrong, these are not the only available options to use as topping for your pizza. You can, in fact, use lightly cooked minced meat, chicken, Chopped onions, Green peppers, any Sausage, Bacon, Olives, Ham, sweet corn, Pineapple, Mushrooms, Basil, Barbecue chicken or Just plain cheese i.e Mozzarella, parmesan, goat cheese, cheddar or a combination). Weird, but the pizza made with just plain cheese is actually my favourite and it goes by the name Margarita. Once you’re done making your pizza dough as shown in the previous post, making pizza from scratch gets pretty easy. Here’s How to make pizza from scratch (with or without an oven)

Ingredients
- • 500g Homemade Pizza Dough
- • 1 cup Pizza sauce (I used Tomapep Puree)
- • 3 small Chicken frank sausages
- • 1 medium-sized Green pepper
- • 1 cup Sweet corn
- • 1 cup Cornmeal
- • 2 cups Mozzarella Cheese
Instructions
Step 1: The first step is to get your pizza sauce ready. Pizza sauce is simply a combination tomato paste, oregano, Italian seasoning, garlic powder, onion powder, salt, black pepper, sugar. For this pizza, I used tomapep puree which is a mixture of tomato, red scotch bonnet pepper, garlic and onion. Once pureed into a fine paste, it was boiled till all the liquid evaporated, seasoned with salt and fried with vegetable oil.
Step 2: Chop the sausages and green pepper into thin slices and set aside
Step 3: Flour the smooth working surface with cornflour and flatten the dough with your hand till you get a thin disc. Place the disc on a baking sheet or pan
Step 4: Cover the top of the flattened dough with the tomato paste, sausage, sweet corn, green pepper and cheese. If you are using soft cheese, make sure you break or grate the cheese into smaller pieces to enable it to melt easily. if you're using hard cheese, use a grater.
Step 5: Bake in a preheated oven at about 550°F or Higher for about 10-15 minutes till the Crust is browned and the cheese melts on top. When using a pot or oven, make sure it's very hot before putting in your pizza to bake.
Slice and serve.
