How to Make Plantain Frittata With Beef (No Oven)

Sure bread, akara or fried plantain comes to mind when you think of breakfast. But, have you ever tried making a frittata? Now buckle up and sit tight because this is the kind of breakfast you’d want to cool down to eat with hot or chilled beverage.
Frittata which translates to “fried” is an egg based dish of Italian origin, enriched with other ingredients such as meat, sausages, vegetables, cheese or even pasta. It’s soft, chewy, slightly sweet and o-so-nice! To make this, i’d suggest you use a non-stick pan preferably. This is to enable the frittata come out easily and whole once ready. How To Make Plantain Frittata “Nigerian Plantain Fiesta” (Pan Method)

Ingredients:::
• 3 Ripe Plantain

• 2 cups

ground/ minced beef

• 2 medium sized red bell pepper – chopped
• 1 medium sized onion – chopped
• 1 medium sized green bell pepper- chopped
• 5 eggs
• 1 tbsp. chili powder
• 1tsp. crushed seasoning
• 2 cups cooking oil
• Salt to taste
 
Directions:::
Step 1: Slice open the ripe plantain and cut into any desired shape. I made mine round. Add salt to taste and toss to mix everything together. 

Step 2: Pre-heat the cooking oil on medium heat and add the plantain. Fry till golden brown, then drain the fried plantain on a paper towel

Step 3: Remove the oil from the pan completely and add the greased pan back on the burner. Add half of the chopped onion and stir fry for 30 seconds. Add the

ground beef

, chili powder, seasoning and salt to taste stir and let it cook bare for about 10 minutes till it releases its juice. Once it’s cooked, turn that out, into a different bowl. 

Step 4: In an empty bowl, combine the eggs, onion, green bell pepper (1/2 of it), red bell pepper (1/2 of it), minced meat (1/2 of it), plantain (1/2 of it), and salt to taste. Mix everything together and pour into the greased empty pan. Top with the rest of the

minced beef

, plantain, red & green pepper. 

Step 5: Place the pan back on the burner and cover. Leave to cook on very low heat for about 10-15 minutes or till the bottom is set but the top is still runny. 

Step 6: And your plantain frittata is ready. Slice it up
