How to make Tapioca pudding with KpoKpo Garri

Whenever you hear KPOKPO Garri on the streets don’t be confused, this is because it’s simply the one and only Tapioca. I really don’t know why tapioca doesn’t get so much love as Pap (Akamu/Ogi), as it’s absolutely tasty and definitely deserves the same adulation as other Nigerian desserts especially “The Oga at the Top“. Tapioca is the white starchy extract from cassava. it’s fermented, flaky version is the garri we all know. it’s a staple food in some parts of Nigeria and it has a similar consistency with pap, from the way it is prepared to the way it is eaten though its physical appearance looks more like it has got round, clear starch bubbles in itMy first Encounter with this meal was HERE on street foodie waka and i immediately fell in love with it

Tapioca a.k.a KpoKpo garri
.Some of the health benefits of tapioca include its ability to help in healthy weight gain (1 cup of tapioca = 45% of daily carbohydrate requirement). This is because, although majority of people in Nigeria and various parts of the world are concerned about staying thin and fit, there are also a whole lot of people who look for options for healthy weight gain because being underweight can be just as dangerous as being obese, and tapioca provides a quick and easy way to gain weight in a fast and healthy way. It also helps to improve digestion, lower cholesterol, prevent diabetes, improve metabolic activities, protect bone mineral density, protect against birth defects, protects heart health, prevent Alzheimer’s disease, increase circulation and red blood cell count, and maintains fluid balance within the body.

Ingredients:::
•1 cup Coconut Milk (View extraction process here)
•1/2 cup Sugar
•Milk (As desired) 
•Water (As desired)


Directions:::
Step 1: Place the Tapioca in a medium sized bowl and pour water over it, just enough to cover the tapioca in the bowl for abut 15 mins. 
Step 2: Transfer the soaked tapioca into a small pot and pour the coconut milk over it. Add some water (Just enough to cover the contents in the pot) and turn on the burner to medium
Step 3: Cook till starts to look translucent for about 10-15mins. Once it’s translucent, the starch is ready to eat.
Turn off the burner, add milk and sugar – Serve
