Mmanu Ogiri – Locust Beans Oil

In Most African homes, palm oil is one major cooking ingredient that is hard to miss. It’s used in just about everything; In soups, In stews or even taken raw with a little bit of salt sprinkled over it. Recently, I decided to my my favorite lazy palm oil sauce which i paired with cocoyam and fried fish. 
Now to go a little bit further with the local vibe, other ingredients such as ogiri, pepper and onions were also added. Take it from me when i say, this local sauce is absolutely delicious! It was served with boiled cocoyam but you could serve with boiled or roasted yam or plantain.

This is a sauce for a lazy day. All you need is water or a nice beverage once you’re done.

Ingredients:
1 Cup Palmoil 
1 Bulb Red Onion
• 2 Red Scotch Bonnet Pepper
1 Yellow pepper, Ground
• 1 tbsp. Ogiri/Iru/Dawadawa
• 1 tbsp. Crayfish, Ground
•  1/2 tsp. Salt

Directions:::

 

Step 1: Pour the palm oil into an empty pot and place on a burner. 

Step 2: Add the chopped onion, fresh pepper salt to taste, Iru and crayfish.

Step 3: Stir so it doesn’t get burnt. 

Serve with cocoyam, yam or roasted plantain
