Shredded ginger beef recipe

Cooking beef anytime soon? Here’s a fun pasa pasa way to make it really appetizing. It’s so tasty and tender, you might never want to cook beef any other way again. I must confess, the first time i tried this was at one of these hip naija restaurants and i fell in love with it immediately. Since then, i’ve been making it and serving it with potato, rice of different variants i.e jollof, fried, coconut, Yam and a host of others. What makes this stand out is the overpowering flavor of the ginger which you can’t help but notice. So what’s in this, simply beef, a few seasonings, carrot, cucumber and that’s just about it. If you’ve got tomato, toss that in the mix too and lunch is served.

How to make Shredded ginger beef
• Prep time:
  20 mins
• Cook time: 40 minutes
• Total time: 1 hour
• Misc:          Serve hot 

Ingredients:::
• 1lb (pound) boneless Beef
• 1 medium sized Ginger 
• 6 cloves Garlic 
• 1 medium sized Onion 
• 1 tsp. Rosemary 
• 1 tsp. ground nutmeg 
• 2 tbsp. chili pepper – ground 
• 2 seasoning cubes 
• Salt to taste 
• 2 cups Cucumber (optional)- diced 
• 1 cup Carrot (optional)- diced 
Directions::: 

Step 1: Slice the beef into small stripes, rinse and place in a pot. Add salt to taste, nutmeg, rosemary, crushed seasoning, onion and ginger.

Step 2: Place the pot on the burner and let the meat cook for about 30 minutes in it’s own juice which would be released while it cooks till it’s tender. you can add a little water and cook further if it’s not soft enough.

Step 3: Add the minced garlic, pepper and extra minced ginger if you want to have a stronger taste of ginger and cook further for 7 minutes.

Step 4: Turn down the heat and add the diced cucumber and carrot. leave to simmer for 3 minutes on low heat then turn off the burner. Serve as a side dish with rice, yam, potato or whatever you want.
