If you’ve been to the northern part of Nigeria, the name wara wouldn’t be an unfamiliar term to you. It’s also not uncommon to find wara sellers, mostly fulani women hawking pots of white wara in street corners. Simply put, wara is locally made cheese which is commonly sold in parts of the country where there’s access to fresh milk.
There are two major types of wara i.e wara milk and wara soya made from milk and soya respectively. The uncooked curd is known a cream cheese which is the major ingredient we’d be using for this. The cooked curd is what is mostly available by the sellers. It has a rubbery texture and is used in making beske, a golden brown snack made from deep fried cheese curd. If you can’t find fresh wara milk around your vicinity, simply use any prepacked cream cheese you can afford. I love making this for breakfast and the aroma it leaves the house with is usually breathtaking. This i’m sure you’ll love it too.

How to make wara chicken bread roll
• Prep Time: 30 minutes
• Cook Time: 10 minutes
• Misc: Serve warm
• Level: Easy
Ingredients:::
• 12 slices of bread (Click here for bread recipes)
• 5 medium cloves garlic – minced
• 2 cups chicken – diced into little bits
• 1 tsp. thyme
• 1 tsp. pepper
• salt to taste
• 1 cup spring onion – chopped
• 1/2 cup wara “cream cheese” (uncooked curd)
• 2 medium sized eggs
• 1 cup flour
• 1 cup bread crumbs
• 3 cups cooking oil for deep frying
Directions:::
Step 1: Pour 2 tbsp. of cooking oil into an empty pan and leave to heat up for 1 minute.
Step 2: Add the minced garlic and leave to saute for 1 minute then add the diced chicken. Stir fry for about 5 minutes on medium heat till the chicken cooks and gives off it’s juice.
Step 3: Add the thyme, pepper, salt to taste. Stir to mix and leave further for 2 minutes.
Step 4: Separate the chicken from the oil and transfer the garlic oil into a different bowl. This can be mixed with the main oil to be used in frying this or it can be used in cooking something else.
Step 5: Add the chopped spring onion, cream cheese and mix everything together.
Step 6: Get three bowls ready. Whisk the eggs in the first bowl, pour the flour in the second bowl and pour the bread crumbs into the third bowl. Place the bread on a flat surface and remove the brown edges. With a rolling pin, flatten the bread
Step 7: Spread a thin line of whisked egg on the edges of the flattened bread. Add a spoon of the garlic chicken and cheese mixture then roll. Seal by pressing the open edges together
Step 8: Roll the sealed bread in flour first, then egg wash and finally coat with bread crumbs. Repeat till you use up the whole batch.
Step 9: Deep fry in hot oil till golden brown and drain on a paper towel.
Serve with your favorite dipping sauce.
