Kanjika – Nigerian jello like sweet

Yes! this is a refined version of Eko or agidi and it’s known as kanjika. Kanjika is a tasty jello-like sweet made from fermented corn starch and coconut milk. It can be eaten alone as a snack or soaked in milk, just the way eko is soaked. The best part is, you could give it any shape, colour and flavor you want to. I used a heart shaped mold for the kanjika in the pics and also 3 basic colors; red, blue and yellow although the coloring part can be skipped. It’s really easy to make and kids would also love to take part in the fun. 


How to make Kanjika
Prep time:

Cook time: 8 mins
Inactive:     2 hours
Total time: 2 hrs 13 mins

Ingredients:::
• 5 heaped tbsp. Pap “Ogi/Akamu” (Fermented corn starch)
• 3 tbsp. Sugar
• 2 cup coconut milk
• 1 tbsp. Coconut – Grated
• 1 tsp. Nutmeg – Grated
• 1 tsp. Vanilla flavor – Optional
• ¼ tsp. Food coloring – Optional

Directions:::
Step 1: Mix the pap with coconut milk and sugar

Step 2: Add the flavoring to the mixture and stir thoroughly. Pour the mixture into a pot and place on a burner. Stir continuously for about 6-8 minutes till the pap thickens. Once it thickens, add the grated coconut (if using)

Step 3: Pour into decorative molds and allow cooling and solidifying for about 2 hours. You could also add different colors to the kanjika. Serve as dessert or snack!
