An easy, hearty Nigerian dish with a creative and delicious twist! 😍 YUM!!⁣⁣ ⁣⁣ Serves 4⁣⁣ ⁣⁣ INGREDIENTS⁣⁣ ⁣⁣ 1-inch slice water yam, peeled and cubed⁣⁣ 1 ripe plantain, peeled and cubed⁣⁣ 1 unripe plantain, peeled and cubed⁣⁣ 2 red onions, finely chopped⁣⁣ 1 cup dried crayfish, coarsely ground⁣⁣ 2 cubes Knorr Classic Flavour⁣⁣ ¼ cup red palm oil⁣⁣ 1 sachet Knorr Classic Seasoning⁣⁣ 2-4 atarodo, finely chopped⁣⁣ 1 medium smoked mackerel, skin and bones removed and cut into big chunks⁣⁣ 1 big bunch shọko, shredded⁣⁣ Salt, to taste⁣⁣ METHOD

1. In a medium pot, combine the water yam, plantains, half the chopped onion and ground crayfish. ⁣⁣ ⁣ 2. Crumble in the Knorr Classic Flavour cubes. Pour boiling water over the contents to just cover.
⁣⁣ 3. Pour in the red palm oil, cover with a lid and bring to the boil. Turn down the heat and simmer for 5 minutes. ⁣⁣ ⁣ 4. Add the Knorr Classic Seasoning, atarodo, the remaining onion, smoked mackerel and the shọko. ⁣ ⁣⁣ 5. Cover with a lid, bring to the boil again and cook for 1 minute, or until the shọko has just wilted. ⁣⁣ ⁣ 6. Add salt to taste, stir well, and serve.
