Wheat meal is a dish prepared as a form of “Swallow” in Nigeria. It can be taken with any Nigerian soup in form of morsels. It is rich in superior fiber which helps in curbing the rate at which sugar is absorbed from the intestinal tract and it aids in weight loss by making you feel fuller.
•Serving size: 1
•Cook time: 15 minutes
•Total time: 15 minutes
•Dietary: Diabetic , Weight loss
•Meal Type: Side dish for soups
•Region: Nigeria
Ingredients:
•2 cups Wheat meal (i used honeywell brand)
•1litre Water
Preparation
Step 1: Boil the water in a small pot till it starts bubbling then remove about 500mls and set aside
Step 2: Into the pot with the other 500mls left, Stir in the wheat flour with a wooden spatula ( in one direction either clockwise or anticlockwise so it doesn’t form lumps ). Do so till you get the semisolid consistency of the normal Swallow (like garri)
Step 3: Add the other 500mls into the wheat in the pot then cover and leave to cook for about 15mins till the water evaporates.
Step 4: Turn once more and mould into any shape
Step 5: Serve hot as a form of swallow with any Nigerian soup

We are still waiting for the "how to roll swallow" lecture oh! Though I suspect u just need to wet your rolling pin, place eba or wheat on a flat board and roll away LOL

Hi Anon, Once you mix the swallow to a semi solid consistency and add the water, turn down the burner and leave it to simmer on low heat while turning consistently to prevent it from getting burnt. Also Make sure the wheat meal isn't too soft but as firm as the normal garri swallow before adding the water. Hope this helps.
Please what kind of wheat can some of use in abroad use since there is not easy to find African store around. Is it the wheat flour made for baking? will it be good for making our Nigerian solid? Pls help, I'm desperate.
The wheat flour used for swallow (Brown in colour) is different from the wheat flour used in baking (White in colour). This is because, the type used for swallow is simply Soft wheat which has been crushed whole with the husk while the wheat flour used in baking has been dehulled and then the inner part crushed. you can't use the " White" wheat flour used in baking for wheat meal swallow. The type used for swallow is the wheat which has been ground "Whole" which includes the husk and inner part.

Thanks for this post. Every time I try mine doesn't have this colour. Always darker and too soft and taste raw even when I leave to boil. What am I doing wrong?
Hello Anon! The dark color might be from the brand of wheatmeal you used. For the texture, try making it stiff (like garri). Once its stiff enough, spread it within the pot making sure you leave gaps so that the water can penetrate the swallow. Add some boiled water and leave to cook on low heat for about 5mins then fold in once more with your wooden spatula.

I found out I almost did d right thing, except 4 d 15mins timing, low heat nd 500ml(didn't measure). It turned out soft nd burnt underneath. Tnx again coz I'd sure do better nxt tym.

i tried doin d wheat wit d natural wheat seeds which i ground in d market in nigeria pls it turnd out to b too sugary,watery,an lookin dark brown.wat could hav been d cause also is d natural seed ok or i need to use honeywel
Hi anon, it depends on the wheat you used. There are two major types of wheat sold in Nigeria. There's the soft wheat and there's the hard red winter wheat. The soft wheat is mostly used for "swallow" while the hard red winter wheat is used for bread. most times the market sellers sell the hard red winter wheat.
Hi Dobby, Is it okay for me to use the wheat flour that is stocked at the local store here? It says strong stone ground 100% wholemeal flour. And the ingredients listed on it are wholemeal wheat flour and wheat gluten.

Hi Bilkisu. No it can't. All purpose flour is the flour used in making white bread (it is also known as wheat flour and white in colour). Wheatmeal on the other hand is the bran(chaff) and brown in colour. Do you mean wheat meal or wheat flour?
