Jollof Rice - Goat Meat Jollof Rice
Jollof rice definitely needs no introduction and its popularity transcends different countries and cultures. With lots of difference in play also comes different preparation methods as well as different flavor profiles. In this post, we'd be learning how to make this tasty goat meat jollof rice .
Ingredients
- 1 kg goat meat
- 2 medium-sized onion
- 1 small ginger
- 5 cloves garlic
- 4 medium-sized fresh pepper
- 1 tbsp. rosemary - optional
- 3 cups cooking oil
- 1 cup tomato paste
- 1 cup tomapep (tomato & pepper) puree
- 2 cups goat meat stock
- Salt - to taste
- 1 tbsp. thyme
- 4 seasoning cubes
- 4 cups rice
Instructions
Step 1: Place the goat meat in a pot. Add onion, ginger, garlic, fresh pepper and rosemary. Leave the goat meat to cook on low heat for 15 minutes till it gives off its juice. Add salt to taste and water, just enough to cover the meat in the pot and leave to cook further for 30 minutes till soft. Separate the goat meat stock from the cooked goat meat
Step 2: In an empty pot, heat up the cooking oil for 3 minutes. Add the cooked goat meat and fry till it gets really dry and golden brown. Set this aside.
Step 3: Reduce the oil used for deep frying, then add the chopped onion and fry for 1 minute till translucent.
Step 4: Add the tomato paste and stir-fry for 3 minutes before adding the tomapep (tomato and pepper) puree. Stir fry this for about 5 minutes. Add the bay leaf, goat meat stock, salt, thyme, curry powder and seasoning. Stir and add the parboiled rice. Pour in some water, just enough to cover the rice in the pot, mix and cover the pot.
Step 5: Leave to cook till the rice softens.

To get that party rice flavour, it's at this point you allow the rice to burn underneath. Once the smoke infuses with the rice, your meal is ready. Serve with fried stewed goat meat. Enjoy!
