Ingredients:::
- 4 large Carrots
- 12 medium-sized Potatoes
- A handful of Runner Beans
- Salt – To Taste
- 1 tsp. White Pepper
- 1/2 Cup Vegetable Oil
- 1 tbsp. Garlic Powder
- 1/2 tsp. Ginger Powder
- 2 tbsp. Chili Powder
- 1 tbsp. Chicken Seasoning
- Salt -to taste
- 4 medium-sized chicken thighs
- 1 tbsp. Oregano
- 10g Butter
Directions:::
Step 1: Rinse the vegetables and potatoes thoroughly then chop them into large chunks. Transfer the potatoes and carrots into a baking dish, add the rinsed runner beans, and season with salt and pepper. Add some oil and mix. Set this aside.
Step 2: Combine the Garlic Powder, Ginger Powder, Chili Powder, Chicken Seasoning, Salt, Chicken, Oregano together and pour over the chicken. Rub this into the chicken and leave to marinate for 1 hour or overnight.
Step 3: Place the marinated chicken on the baking dish with the potatoes and bake for 50-60 minutes at 425 F (220 C). While the chicken is baking, melt the butter.
Step 4: Bring the chicken out of the oven and glaze with the melted butter and oregano mix. Grill in the oven for additional 3-5 minutes and the meal is done. Serve alone or with a sauce by the side as comfort food.
