I love baking cos it makes me happy and believe me when I say, no biscuit tastes better than homemade biscuits. Today, I woke up really early to whip up these lovely cookies for breakfast. You know how it is in Lagos. During the week, everywhere looks so deserted cos people move out for work but during the weekend, the town comes back to life with its usual hustle and bustle, Noise, parties….I tire sef! In order to avoid the usual Saturday morning market rush where I stay, I had to buy the ingredients yesterday. A typical Saturday morning for me starts with me whipping up a quick snack for the fam or guests. You could sneak in these luvly cornflake cookies for breakfast or even to entertain guests as an appetizer. Me luvs it…..and i’m sure you would too 😉
•Prep time: 20 minutes
•Bake time:45-50 minutes
•Makes: 27 cornflake cookies
Ingredients:::
• 30g Corn Flour (Also called corn starch)
• 60g Cornflakes
• 1 tsp.
Directions:::
Step 1: Beat the butter and sugar in a bowl till it turns pale and fluffy. Add the vanilla essence and Stir in the lightly beaten eggs gradually.
Step 2: Sift the Wheat Flour (All-purpose flour) and corn flour into the mixture and gradually mix with a spatula till a fairly firm dough is obtained. It shouldn’t stick to your finger when you touch it a little.
Step 3: Scoop about a heaped tsp. of the cookie dough and roll it into the crushed cornflakes.
Step 4: Transfer to a baking tray lined with parchment paper spaced apart . With a spoon, press the rolled dough down a little.
Step 5: Bake in an oven at 150◦c (300◦ F) for 45- 50mins till crisp and lightly browned. Remove and place on a wire rack to cool.
Serve with your favorite beverage
