Adalu - Beans & Corn Porridge
Beans & Corn (Adalu) porridge is a simple one-pot meal enjoyed by most people. it is one of the best sources of protein. it's also rich in Fiber, high-quality carbohydrates, vitamins and minerals. These heart-healthy nutrients gotten from beans help lower cholesterol, triglycerides, and blood pressure, and they can reduce your risk of coronary artery disease, osteoporosis and diabetes. it could be served with Bread, Fried/boiled Yam or plantain , Pap, Custard, or Soaked garri.
Ingredients
- • 300g Brown/white Beans
- • 1 medium-sized Onion
- • 2 red scotch bonnet Pepper "Ata rodo"
- • 1 seasoning cube
- • 1 Cup palm oil
- • 2 tbsp. Crayfish - Optional
- • Salt to taste
- • 5 medium sized Corn on the curb
Instructions
- Step 1: Separate the beans from the chaff, rinse and place in a pot. Add enough water just enough to cover the beans in the pot and add the chopped onion and pepper. Do not add salt at this stage. This is because salt tends to harden the beans even more.
- Step 2: Cook on medium heat till tender while adding water once in a while when you notice it drying up. It's always best to keep the water on the same level as the beans while cooking till it gets soft.
- Step 3: Once the beans is soft, add the Palm oil, Seasoning cube, Salt, and Crayfish. At this point, you can add your cut yam/ plantain or sweet potato (if you enjoy it better mixed with the beans otherwise, you can simply fry it separately and set it aside). Don't Stir - Cover and let it cook for about 15 mins more till the beans porridge turns soupy like in the picture below and the added yam/ plantain or sweet potato is done.
- Step 4: At this point, stir with a wooden spoon and add the corn. Leave to simmer on low heat for 5 minutes more. Serve with Fried yam, Fried plantain or Fried sweet potato if you didn't add any while cooking. Even if you did, you could also serve beans porridge with Bread, Pap (akamu/ogi) Custard, or soaked garri...Enjoy!!

Nne daalu o. Beans is not my fav food but believe u me some days I wake up yearning 2 eat beans lyk its sometin I enjoy eating but d truth is even if u dnt like beans ur body will beg for it when it wants cos its nourishing especially when eaten wif plaintain….Jeeeeez!

My kids don't like beans except a very ripe plantain n tomanto sauce is added to it …n d beans has to be extra soft…hmmm just delish
Beans is definitely notorious for that. To prevent the effects from occurring, place the beans in a bowl and then run cool tap water over it thoroughly; shake the bowl back and forth to make sure the water reaches all the beans. Then cover the beans with water so that the water level is at least 2 inches above the surface of the beans. Soak for at least 6 hours or better still soak them overnight. Drain at least once and replace the water.
By thoroughly rinsing and soaking the beans, the process begins of drawing out the indigestion-causing sugars and other substances which produce gas.
That's so true, some days are also like that for me. But beans with with plantain, sweet potato, yam definitely does the magic everytime 🙂

Yes the sweet corn in the tin. You can also get it fresh on the cob in places like shoprite. Normal corn can also be used.

Hi dobby gr8 blog.i just cooked d panla stew.it was amazing.concerning jollof beans,does it mean parboilin beans is wrong and I prefer frying d onions separately wt d red oil bfr addin to d beans.it tastes unique.
Thanks for the feedback amaka. Parboiling beans is really not necessary. Most people to it to rice to remove most of the starch. Frying the onion separately is not a bad idea too.
Hello Dobby. Pls what steps can I take to prevent beans from disintegrating? My dad likes his beans soft and I really don't know how to make it soft enough with out turning it to half ewa agayin.
Hi janine, There are different types of beans usually sold in the market. So, the disintergration might be due to the type used by you. Beans such as honey beans tends to do that so cooking it in lesser time might do the trick.
