Chicken Yassa is an African dish with its roots from the Casamance region of Senegal. It’s basically a flavorful chicken marinated in onion, lemon and spices then grilled or fried and later cooked with lots of onion.
It’s best enjoyed with cooked rice. Yassa can also be made with fish (fish yassa) where fish is substituted for chicken. It’s also not unusual to see olives and chopped vegetables added to give the dish a wholesome taste. Ingredients:
Marinade
•1 kilo chicken
•5 garlic cloves (minced)
•1 tbsp. black pepper
•2 seasoning cubes (crushed)
•1 medium sized onion (pureed)
•½ cup lemon juice
•Salt to taste

•½ cup cooking oil (preferably groundnut oil)
•3 medium sized onions
•2 tbsp. dijon mustard
•2 bay leaves
•2 fresh pepper (preferably scotch bonnet)
•Salt to taste

Directions:::
Step 1: Place the chicken in a mixing bowl. Add minced garlic, onion (blended), black pepper, crushed seasoning, salt to taste & lemon juice into the bowl and mix. Place the bowl in the refrigerator and leave to sit overnight.
Step 2: Remove the chicken from the marinade and place on a grilling rack. Grill for about 10 minutes on each side or till brown. To give the chicken a better flavor, you could use an outdoor charcoal grill.
Step 3: In an empty pan, pour in the cooking oil. Add the onion rings and stir-fry for about 5 minutes till it’s well caramelized and brown. Add the mustard, grilled chicken and marinade from the chicken, fresh pepper, bay leaves.
Step 4: Add water and cover. Leave to simmer on low heat for about 15-20 minutes till the chicken is soft and tender and can be pulled off from the bone easily.
Step 5: Once it’s ready, garnish with olives and serve with white rice. Enjoy!
