Coconut rice is a very popular dish in most parts of the globe. From the different varieties, I’ve prepared so far such as; Brown coconut rice to Coconut rice made with goat meat, to Coconut rice made with prawns, to Coconut rice made with shrimp and even Jollof coconut rice, it’s no surprise when I say it’s also a favourite.
In the south-eastern part of Nigeria, coconut rice goes by a different name…Edesi Isip which translates roughly to coconut rice “Edesi means Rice while Isip means Coconut. This dish is very common in Efik/Ibibio speaking parts of the country and it’s also prepared differently. What makes this dish different from other coconut rice dishes? Well, One sure thing you’ll notice with Calabar/Efik delicacies is their love for seafood. From prawns to periwinkles to ….you name it. Edesi Isip - Efik/ Calabar Coconut Rice
Edesi Isip - Efik/ Calabar Coconut Rice. In the southeastern part of Nigeria, it goes by a different name...Edesi Isip which translates roughly to coconut rice "Edesi means Rice and Isip means Coconut. This dish is very common in Efik/Ibibio speaking parts of the country.
Ingredients
- 750g Meat
- 1 medium-sized Onion - Chopped
- 4 medium-sized fresh pepper (scotch bonnet) - Ground
- 3 Cups Rice
- 2 Cups Coconut Milk
- 250g Prawn
- 1/3 cup Crayfish - Powdered
- 3 Seasoning cubes - Optional
- Salt - to taste
Instructions
Step 1: Place the meat in a pot and add the fresh pepper, onion, seasoning. Leave to cook for about 15 minutes till it gives up its juice. Add salt to taste and water, just to cover the meat in the pot and cook for extra 30 minutes till soft.
Step 2: Remove the meat from the pot, leaving the stock. Grill the meat and set aside
Step 3: Add the washed rice, coconut milk, prawns and ground crayfish into the meat stock. Cover and cook till the rice gets soft.
Step 4: Mix the rice, add the grilled meat and Serve!
