I learnt everything about Baking without an oven from the only school that counts – “The school of Hard Knocks”. Thanks to the epileptic power supply and also being a typical Nigerian, learning to be innovative with ideas wasn’t a difficult task.
this method of baking without an oven is a method I’ve used over a gazillion times especially in the village where electricity and gas are scarce. The good thing about this method is, you wouldn’t have to be bothered about power failure or having to open the electric oven door while the baking is going on in event of Nepa/Phcn magic as it could spell doom for the cake. Plus, it’s a very good way to save gas ;). The difference between this new pot baking method and the conventional Pot baking method with sand is there is no sand involved. I don’t know if it’s just me but sand makes whatever is being baked have a funny dusty taste.
Utensils
•1 aluminum pot (An old one preferably)
•1 Flat aluminum plate or Baking pan
• Queen cake cups
• A Stove / Gas / Electric cooker
Procedure
Step 1: Place the pot on the burner ( Stove, Gas or electric cooker) and reduce to medium heat
Step 2: Turn the aluminum plate upside down and place in the pot if you are making large “whole” cakes. If you want to make cupcakes like in the pictures, you would have to substitute the Aluminum plate for a clean baking pan to get a larger surface area.
Step 3: Line your Queen cup cake pans with Baking Sheets. If you don’t have baking sheets, you can simply grease the cup cake pans with little margarine and dust with flour. This would make the cakes come out easily once done. Scoop your batter into the cupcake pans.
Step 4: Place the cupcakes on top of the overturned baking pan and cover the pot.
Step 5: While baking, DON’T open the pot as this would make the cakes collapse. Only open when the baking time elapses (One sure way to know if the cake is ready is when the aroma starts filtering out).

Thanks anon!yes you can use a New aluminium pot like the one in the pic (Tower aluminium brand) but I wouldn't advise you to get any pot made with baking pan material as those types aren't durable(The bottom part erodes after one or two uses). Also, the baking pan pot doesn't conduct or retain the type of heat required for baking like the normal aluminium pot.you also wouldn't have to worry when using the normal pot as it wouldn't erode or get dirty.

Sure it can anon. Plus, stainless and aluminium are interchangeable terms for almost the same thing in nigeria :). You should check the local markets for the plate cos they are every where.

If you are making a big pan cake, its advisable to place an overturned 'stainless plate' into the pot before placing the big baking pan with cake mixture on top of it. The overturned baking pan is used when you need a larger surface area for your baking. And Yes…you can use this method for meat pie too.

Your question isn't stupid at all. The answer is yes you can :). The only type of pot I wouldn't advice any1 to use is the type made with Zinc material (Baking pan material). The flat plate in the picture is a stainless steel plate.

Hi Jenny, Thanks for stopping by. Butter icing is really simple to make. for the ingredients and utensils, you'd need:
Ingredients: Icing Sugar, Butter Or Margarine, Flavor Essence (Such as vanilla, coconut, Butterscotch e.t.c, Colouring
Utensils: Electric Mixer Or a Wooden spatula, Icing pump/piping bag
To make butter Icing,
Place the Butter in a mixing bowl and mix with the Mixer/spatula till it softens a little. Sieve the Icing sugar into the bowl and Mix thoroughly with the butter(An electric mixer would be preferable) till the combination looks pale and fluffy. Add the Flavoring and drops of the color you intend using and cream the mixture till it gets really smooth. Spread the mixture over the cake and you are good to go. You can also add the mixture into an Icing Pump/ piping Bag and pipe round the cake for a cleaner look and more decorative look.

hi Anon! That's probably because you used a lot of flour. Try taking the accurate measurements of the ingredients. Also make sure you whisk the eggs thoroughly and also beat the butter or margarine till pale and fluffy.

No you can't use stainless plates else your cake might not get properly done, it might stick to the pan or worse still, get burnt

Wow! what a revolution..truly amazing..i baked a large ck and cupcks and i used a pan instead of d steel plate for d large ck.d cupcks came out realy fine,bt d large one burnt n had a funny taste @ d top.I also use calendar paper as a base after oiling my pan n it doesnt burn in my oven.bt this got burnt.u hav any idea why?

Now this is confusing :s… the steel plate is meant to be a base where you could place your pan and not to be baked in. Also, you shouldn't have baked with calender paper :s. This is what you should do when next you bake…grease the pan with butter (If you aren't using baking sheets) and sprinkle with flour so it'd coat the greased pan. this is to ensure it comes out easily once the cake is done. If you are using baking sheets, you DON'T need to grease the pan cos it'd come out easily on its own. On a final note….PLEASE, don't use calender paper next time dear, aii' :).

You could leave the pot on fire for 10mins on low heat (blue flame) b4 putting the cakes.

No question is stupid :). No the pot wouldn't be filled with smoke and blackened if you do it the right way. Before you bake, make sure the burner has blue flame (Not red flame) meaning you have to reduce the temperature to medium or low if you have to. That way, your pot wouldn't darken or smoke.

Thanks for the compliments, i really do appreciate :). i learnt how to bake with a pot back in the uni. we rarely had power supply and large cookers such as gas/electric ovens was seen as contraband so i had to make do with what i had which was the aluminium pot and several others(Zinc pots inclusive). From my experience, the best type of pot to use is the aluminum/ stainless steel pot (just like the tower aluminum brand ….This is not an advert but just stating the obvious). it doesn't wear or get damaged no matter what you do. Infact, when you are done baking, it'd look just as clean as it was before you started baking especially if you use a good burner (such as;gas burner,electric cooker, a good stove) with blue flame (of course if you use a kerosene stove that automatically adjusts itself to give the red flame, you might have to scrub the hell outta the back of the pot with an iron sponge :).). Plus, you can also resume your normal cooking with that same pot. Hope this helps.

As I promised I baked using this method and yes the pot and the plate were all fine as you said:-) I am so happy with that.
I baked the cake for 45mn but it was not cooked inside, sticky when eaten. The bottom and the side were good though. I switched to low heat because the flame turned yellow at some point and I was afraid it would be too hot. Any suggestion? Please help, I really want to be able to bake something.

Thanks for the feedback. I'd suggest you use a stove which doesn't automatically regulate itself so that the heat produced would be constant thereby making the end result perfect.

To soften your fondant, try kneading with your bare hands and by doing this the warmth of your skin would help in softening it. To make it easier, add a little vegetable shortening and keep kneading. Put it in a microwave for not more than 10 seconds, bring it out and knead again till you get a soft pliable dough. Make sure you keep it covered at all times else it'd crack or become crumbly. For the cake, you don't need sand at all if you intend using a pot. If you are baking plenty cupcakes (For large whole cakes, you can only bake 1 at a time), Use a baking pan turned upside down to get a larger surface area. you don't need sand at all. Hope this helps.

yes the smallest pot of tin tomatoes can be alternated for stainless plate. Just recently while teaching some secondary school students this baking method, we Used small stones instead of stainless plate and it turned out fantastic. you could bake cookies in a pot. a baking pan could serve as your baking sheet. Glad to have you here :). To ensure the top of the Cake bakes properly, just reduce the burner and leave the pot covered so that the heat would circulate. This would in turn make the cake top get done without stress.
I learnt to bake cake with electric cooker. I used granite stones or sand bit I hate using sand cos I believed peeps spit alot on sand. I never knew bout stainless plate. Sometimes I use coal when I'm in d village. It is d end that justifies d means here in naija, person just have to find an alternative if the desire able isn't available.
The end surely justifies the means. I've also used granite and it turned out just as fine as stainless plate too. Thanks for the addition Nkem 🙂

Yes you can bake on hot plate and you can use a 14inch pan as long as the pot being used can contain it. Hot plate takes a longer time though.

Hi Anon, No you can't add the meat pie on top of each other when baking. It's always best to bake on a flat surface. One of the disadvantages of the pot baking method is the fact that you can only bake few things at a time unlike when you use an oven.

Air won't enter the pot at all as long as you keep it covered. The stainless steel is overturned to keep the cake pan balanced in the pot.

hi stella, it's really nice to have you here too :). In choosing a mixer it's either you want a hand mixer or a stand mixer. Hand mixers are more affordable and could go for as little as N2,000 and above. if you want a more stress free option then go for a stand mixer. With this you can mix large batches. you could get a good one from 6k and above. some good brands include murphy richards, russel hobbs and a host of others.

Also your post said aluminium plate or baking pan. I'm confused with the baking pan. Is this the pan where you put the batter after greasing? Any pot you use is suitable for baking however, using a non-stick pot would wear out the coating over time so it's advisable to use a bare pot. The baking pan serves as the stand for cupcakes due to it's large surface area. That way, you'd be able to place several cupcake pans on it.

Hello Dobby. I have only non-nonstick pots for now. Can I use them or is the aluminium one preferable? Also can i use my hot plate for this? I only use gas when there's no light.
Yes you can use Hot plate for this. You can also use Non-stick pots although i'd advice you to use a regular pot so you don't wear out the coating on the non-stick surface.
The only reason why I won't try this method is I'm scared for my pot, lol. This method could ruin the pot (I guess that's why you suggested an old pot) and I don't have any pot I'm ready to lose! Anyway, about the sand method tasting a little dusty that's because the sand you used is wet(not thoroughly dried). The person I learnt cake from emphasised the importance of dry sand so she has absolutely dried sand in store for the purpose of baking and it DOESN'T taste dusty. In summary, use only thoroughly dried sand!
Using sand is stressful. An empty pot acts more like an oven than a pot with sand. Thanks for the contribution though.
Tanx Dobby. I am new to your blog and must confess I love your posts which are well explicit. I have one question though, in using pot for baking cakes. You said we should upturn flat baking pan to get wider surface for laying cup cakes. But baking pans are usually deep. Or is it a different type from the ones you scoop dough into before placing in oven.

No it's really not necessary. Once the cake is ready, open the pot to let the steam out and don't close it anymore. That way it won't form water droplets.

Hi ma'am Dobby! I truly appreciate ur blog! Kudos 2 u ma'am! I m trying out meatpie baked on gas 4 d first time! Pls ma, can i mke use of a cover of pot in place of a baking pan or tray? Hope dis is not a silly question? I just have a stainless plate nd i thought of using d cover of a pot(tower) as my baking tray! Would d meatpie get "done"? Tankyo ma!

Is it possible to use a pot as a baking pan for bread or is there a way to accurately bake soft bread without a bread pan? I'd really love to try it out before trying cakes… Also do you have any idea of how to work ovens without temperature indicators or a thermometer? Thanks in anticipation

Yes it is possible. Bread pans are also cake pans. To work ovens without temp indicators, simply use intuition.
