Coconut milk is the milky white juicy extract from the coconut flesh. There are two grades of coconut milk: The thick and thin. These two types are used in the preparation of different coconut milk recipes.
The thick is the first liquid extracted after grating/blending the coconut and straining with a sieve. This is then used for sauces, drinks etc. Warm water is then added to the chaff and strained once more. This is the part known as the thin coconut milk. It is used in the preparation of various dishes such as coconut rice and serabi cakes. Usually when left to set, coconut cream will separate from the milk and rise to the top.

Hi dobby, kip up the good work,ps can I use the ist nd 2nd exract 4 coconut rice???
Yes you can ij but the major extract needed for coconut rice is the 2nd extract (The milk).
Coconut milk contains a very high level of saturated fats, but the saturated fats found in coconut milk are mainly short and medium chain fatty acids, which are usually not stored by the body as fats. Instead, such short and medium chain fatty acids have been found to provide instant energy to the body.
