Mackerel egg stew is a quick and simple dish which could be made by anyone and can be enjoyed with almost anything from rice, yam, plantain, potato or even bread. As easy as this sounds, there could be some ‘not so serious preferences’ involved in the preparation of this meal and one of such involves making it either runny like a typical naija stew or making it stiff like scrambled eggs. Ingredients:
• 1 medium sized smoked mackerel fish
• 7 medium sized eggs
• 1 cup tomapep puree
• 1 medium sized onion, chopped
• 1 seasoning cube, crushed-Optional
• salt to taste
• 4 tbsp. cooking oil

Directions:::
Step 1: The first step is to prep the fish by rinsing and removing the bones within. Once this is done, mash the fish and set aside. Next, crack the eggs into a bowl and set this aside.
Step 2: Next, heat up the cooking oil in an empty pan for 1 minute, then add the chopped onion. Stir fry for 2 minutes before adding the tomapep puree. Stir and leave this to cook for 3 minutes before adding the mackerel fish.
Step 3: Season with the salt and crushed seasoning then leave to cook for 3 minutes. Gently stir in the eggs till you get your desired consistency.
Serve!

Crushed seasoning is a short form for crushed seasoning cubes. Seasoning cubes are commercially made stock cubes.
