Nothing screams “It’s weekend” like the aroma of Nigerian pancakes in the morning. I mean i could literally still perceive the wonderful aroma of pepper and onion pancakes coming from the Kitchen.
Directions
Step 1: In a medium sized bowl, combine the flour, sugar, salt together. Crack the eggs into the flour and mix roughly.
Step 2: Mix the milk with the water and pour into the mixture in the bowl. Give it a good mix till you get a smooth runny batter.
Step 3: Add the chopped onion and pepper – Mix.
Step 4: Place an empty pan on the burner. Drizzle some oil in the empty pan and leave to heat up. Scoop a spoon full of the batter into the pan and tilt the pan to spread the batter.
Step 5: Leave to fry and flip to the other side to cook also and your pancake it ready. Repeat till the whole batter is used up.
