Elele mmanu “Palm oil moi moi” is a savory steamed dish made from beans and palm oil and often served as a main course meal. It’s a protein rich meal prepared from a combination of beans, palm oil, peppers, onion and a host of other ingredients. It’s usually prepared in aluminium tins especially saturated milk cups or Uma leaves. Palm oil moi moi is best enjoyed with any sweet porridge such as pap or drinking garri.

How to make palm oil moi moi – elele mmanu

Ingredients:::
• 2 cups Black eyed beans (brown/white)
• 1 red onion
• 2 fresh pepper
• 1/2 cup crayfish (whole/ground)
• 1 cup Palm oil
• 2 seasoning cubes
• Salt to taste
• 2 eggs (halved) – optional
Moi moi containers/ utensils needed:::
• Empty plastic or aluminium tins (E.g moi moi containers, saturated milk tins/sweet corn tins)

Others:::
• Parchment paper (optional)
Directions:::
Step 1: The first step would be to remove the beans skin. This could be done by placing the beans in a bowl, adding water and rubbing the beans together between your palms to remove the skin. You could also do this easily with the help of a blender as shown
Step 2: Place the peeled beans in a blender/ food processor, add the onion, fresh pepper and water then blend till smooth.
Step 3: Once you’re done blending, pour the blend in a mixing bowl, add the crayfish, salt to taste and palm oil. Mix thoroughly till the oil combines well with the beans. you could do this with a wooden spoon or mixer.
Step 4: Add crushed seasoning and water. since you’re using a container it’s safe to add as much water as needed. The more fluid you add to the bean batter, the softer the moi moi would be so be generous with water and mix well.
Step 5: There are two ways to go about this step. if you’re using aluminium tins, grease the containers you intend using with a little palm oil to enable the steamed bean pudding come out easily once ready. Also, parchment paper could be used to line the container. This is the easiest way to extract the moi moi once done.
Step 6: Pour the batter into the containers and add the halved egg. Cover with foil sheets and place the containers into a pot with about 2 cups of water (just enough to steam the moi moi). Leave to cook for about 10-15 minutes or till a tooth pick inserted comes out clean or without runny batter. And your moi moi is ready.
