Simple yet eccentric, this spinach and purple cabbage salad with cucumber & tomato is a tasty salad which is guaranteed to please your taste buds. This is an adapted recipe from a foreign site so it’s safe to say its an acquired taste for me. Very new indeed but i enjoyed every bit of it. It was my first time eating spinach (Amunututu “Yoruba”, Gborongi “Igbo”) raw and also trying out purple cabbage too and here’s my conclusion; The purple cabbage is no different from the normal green cabbage except for the attractive color. Eating spinach raw is really healthy too. This salad is a healthy satisfying meal on it’s own and can be a perfect accompaniment to dishes like fried rice, jollof rice, coconut rice, spaghetti and just anything you can think of.
