Basmati rice is a popular specie of rice which has its origins in India and could be found here in Nigeria. I love it due to its perfumed aroma and unique flavor which is really inviting. it’s perfumed aroma always leaves the house smelling really nice. But sincerely, one thing I don’t like about the rice is the fact that it sticks together though this might be due to the product s I’ve used so far and therefore might not be like that with all basmati rice. I dislike having to break lumps of rice….that’s just too much stress for one person.
Basmati Seafood Fried Rice recipe
•Prep time: 15 minutes
•Cook time: 45 minutes
•Total time: 60 minutes
Ingredients:::
• 250g Fresh Prawns, Okporo or Shrimps
• 1 Seasoning cubes
• 1 tsp. Curry powder
• 500g Basmati rice (I used TRS)
• 1 small bunch Spring Onions, chopped
• 2 medium sized Carrots, finely diced
• 1 large Green bell pepper, diced
• 2 tbsp. Butter and 1 tbsp. Vegetable oil
• 1 Red Onion, diced
• 1 tbsp. Salt
Directions:::
Step 1: Wash the fresh Prawns with water and remove the heads. Place in a small pot, Season with 1 stock cube, Salt, Curry powder, thyme. Add 1 cup of water and leave to steam for about 10mins. Scoop the steamed prawns into a dish and set the prawn broth aside for use later.
Step 2: Heat the oil in a medium sized pot till hot. Add the washed Basmati and toss to incorporate the oil and rice. Add water (Just enough to cover the rice), prawn broth & salt to taste. Leave to boil for about 30 minutes till the rice softens and the water dries out.
Step 3: In a small frying pan, heat 2 tbsp. Butter till hot. Add some thinly diced carrot, green pepper, Spring onion, red onion and stir- fry for about 2 mins. Add the some cooked prawns and stir-fry for 2 mins. Scoop out some of the basmati rice into the fried veggies in the pan and stir-fry for 1 min just enough to incorporate the mixture. Turn in out onto a serving dish and repeat for the rest of the batch till the whole rice is used up.
Serve alone or with and Tomato Stew or Plain Chicken Gravy sauce

Nice! Such a good idea to cook the prawns in a stock! I usually stirfry the prawns with my veg and they end up dry sometimes. Will def try this method. And maybe use the stock to cook the rice 😀
To makE your basmati rice less sticky, I usually soak it in room temperature water for at least 30 minutes before cooking. It really really helps. I also find cooking it in a rice cooker makes it less sticky than on a stove.
