Bread is one of the most common staple foods on the nigerian meal table. The fresh aroma of bread baking in the oven is something i always look forward to during the weekends.
Apart from hot homemade bread being simply irresistible, bread baking is also a way to bond with the family as everyone usually has a part to play in the whole process. It’s also really easy to make and sometimes requires very few ingredients but that depends on how rich you want to make it . Today, i’d be showing you how to make the tasty milk bread. Generally, commercial breads are made with just flour, water, sugar and yeast but homemade bread like the milkbread recipe below is made with extra ingredients such as milk, butter/margarine and eggs to make it richer. If you don’t have an oven to bake this in, use my pot baking method HERE .

Milkbread recipe from scratch
• Prep time : 2 hours
• Cook time: 45mins
• Makes : 1 loaf
• Misc : Serve Hot or cold
Ingredients:::
For the starter:::
• 1/3 Cup All purpose Flour
• 1/2 Cup Milk
For the Bread flour:::
• 4 Cups all purpose flour
• 1/2 cup Sugar
• 2 tbsp. Yeast
• 1 tsp.Salt
• 2 eggs + 1 Extra to use as egg wash
• 1/2 cup Milk (you can mix powdered milk with water)
• 4 tbsp. Butter/Margarine
Directions:::
Making the starter
Step 1: In a medium sized saucepan, dissolve 1/3 Cup of Flour with 1/2 Cup of Milk. Heat up on low heat while stirring continuously till it thickens. Set this aside. This is one of the secrets to making very soft bread.
Making the bread dough
Step 2: In a dry medium sized bowl, Add the Flour, Salt, Sugar and Yeast. Mix to combine
Step 3: Crack the eggs open in a small bowl and whisk. Combine the whisked eggs with the milk and mix.
Step 4: Add the Butter or margarine into the flour mixture and work into it with your hands till it gets crumbly. Gently pour in the milk and egg mixture and the starter in Step1 above and work into it by kneading on a smooth flat surface to form a non sticky dough. If the dough feels sticky, add some more flour till it’s no longer sticky.
Step 5: Place the dough in a bowl and cover with a cloth. Leave to stand for about 1 hour. By the time you remove the covering, the dough would have doubled in size. Punch into the dough and Knead Once more.
Step 6: Pluck a large chunk of the dough, roll into a ball and flatten it out on a surface. Fold the round flattened dough into two by joining the two edges together then roll up into a ball once more. Repeat this for the rest of the batch
Step 7: Grease the baking pan with butter or margarine and place the dough into the pan as shown below. Cover once more and leave to rise for another 30 minutes. For a round loaf of bread shape, use a round pan. For a rectangular bread shape, use a rectangular loaf pan.
Step 8: Once the covering is removed, it’d have doubled in size once more. Whisk the extra egg and brush over the top of the risen bread dough. This gives it a glossy shine
Step 9: Bake in the oven at 350° for about 45 minutes. The top of the bread would be browned once it’s ready as shown. Turn out to cool on a wire rack. Do not leave it in the baking pan as it has the tendency to sweat after a while and that would make the bread soggy.

You're welcome Anon 🙂
You're welcome chyqueen. When it comes to buying gas cookers, there are lots of wonderful products out there. It all depends on the price and also the marketing power of the person selling it. Ignis is one of the most affordable gas cookers in the Nigerian market but not necessarily the best. You just have to check if whatever you want to get has the features you need, also ensure it's got a warranty too.
thank you too muslimsadymuslim :). If the burner has dots, there should be an indicator to show increment or reduction i.e 1 dot for lowest, 5 dots for highest.
