Jollof spaghetti is a meal close to my heart. i love it to bits not just because it’s tasty but also because it’s easy to make. This meal always pops into my head whenever i don’t want to spend long hours in the kitchen. The name jollof spaghetti was coined from the popular Nigerian jollof rice since it’s prepared in a similar way. It could be prepared plain without the additional ingredients listed below but as a Carnivore i actually enjoy mine with anything meat or fish related. If you’ve got your homemade stock, you could use that in place of water. For this meal, you could also use tinned tomato paste to make it faster or make your own paste from scratch as i did in the recipe below.
How to make jollof spaghetti
• Prep Time: 15 mins
• Cook Time: Less than 45 mins
• Serves : Serves 4
Ingredients:::
• 1 Pack Spaghetti
•10 Plum Tomatoes
• 4 Red Scotch Bonnets (Ata rodo) (Or less)
• 4 Garlic cloves
• 1 Red Onion
• 1/2 tsp. Curry powder
• 1/2 tsp. Thyme
• 1 tsp. Salt
• 7 cups water
• 2 Seasoning cubes
•1 cup Vegetable oil
Extras
• 1 Medium sized corned beef
• 3 Smoked Sausages
• 1 Green pepper
Directions:::
Step 1: Chop the onion, Sausage and green pepper -Set Aside
Step 2: Puree the tomato, pepper, garlic in a blender and pour into a pot. Heat up the puree till the liquid drys up leaving the concentrated tomato and pepper paste. Pour in the vegetable oil and leave to fry on medium heat for about 5 minutes
Step 3: Add the Water, Part of the chopped onion, curry powder, thyme , seasoning cubes, Salt. over and leave to boil for about 10 mins (Kitchen Tip: When cooking Spaghetti or pasta, it’s always best to allow the liquid you intend cooking it in boil very well before adding. This is done so that when you add your spaghetti, it wouldn’t stick together after preparation). When the tomapep liquid starts to boil, gently lower in your spaghetti “Vertically” and cover the pot. Leave to boil for about 15-20 mins till almost all the liquid dries up in the pot.
Step 4: While the ingredients in step 3 cook up, place the Butter/ Vegetable oil / Margarine in an empty pan and heat on medium to melt. Add the chopped sausages, green pepper, the remaining chopped onion and corned beef one at a time. Stir fry for about 5 mins – Set aside.
Step 5: Pour in your stir fried sausages and vegetables into the spaghetti and mix. Leave to simmer for 3mins.
Serve Hot!

Hi Anon, parboiling spaghetti is a cooking technique which is used to save time. This is also done to cut short the cooking process (so you don't end up overcooking it til it gets soggy) and also prevent the spaghetti from sticking to each other.

Hehehe am back, it's official this site is my secret, tried the spag and it turned out yummy choi very tasty I didn't eat it alone so am reporting what I was told*big grin* I made chicken stock instantly and used in place of water.although I didn't mix the fried hot dog(in place of sausage) and veggies with the spag, I rather made it lyk sauce and serve beside the spag. Much peks for you dobby your the bes
