Tomato Egg sauce is a versatile dish which can be prepared in different ways. In a previous post on Egg sauce, i showed you how to prepare this dish in a slightly different way.
Tomato egg sauce and Egg sauce are prepared with the same ingredients but in different proportions with the first having more of tomatoes than eggs and the second having more of eggs than tomatoes. you could also add a twist to this tasty egg dish by adding chopped pumpkin leaves. it’s best served with yam, potato, plantain or even rice.
Nigerian Tomato egg sauce recipe:
•Prep time: 10 minutes
•Cook time: 8 minutes
•Total time: 18 minutes
•Region: Nigeria
•Serves: 4
•Misc: Serve Hot
Ingredients:::
• ½ cup Vegetable oil
• 2 Red Onion
• 1 Seasoning cube, crushed
• 1 tsp. Curry powder
• ½ tsp. Thyme
• 2 Eggs
Directions:::
Step 1: Chop the Scotch bonnet pepper, Onions, Tomatoes, Garlic……Set aside.
Step 2: Heat the vegetable oil till hot. Add the Chopped onion and pepper, Stir-fry for 1 minute. Add the chopped tomatoes,garlic, Salt to taste, Crushed seasoning, curry powder, thyme. Leave to fry for 4 mins while stirring occasionally.
Step 3: Break the eggs into the pot and stir to incorporate the mixture. Leave for 3 minutes while stirring occasionally.

I once heard canola oil is generally much healthier than vegetable oil when cooking, so I subconsciously shriek when I see vegetable oil as a part of any recipe, do you have any thoughts on this?

l:)l! Sorry for the late reply queen. Did you boil it well? You need to boil it well till it's almost elastic before pouring into the leaves.
Canola oil is healthy as it contains healthy fats that are good for us in moderation but vegetable oil is more popular , affordable and common in the nigerian market.

Am not a regular at the kitchen due to where I work,we get served.some Kind of challenge came up on preparing egg sauce professionally at a frnds place and I quickly googled and it was dobby signature,it was amazing how tasty it turned out,it's was worth heeding to up egg sauce recipe, I would never have Thot of fryin the onions and pepper first.allowing the egg heat in a cake form.it was nice thumbs up Dobby and for the snail recipe it's was superb experience .
