What happens when Rita fries yam dipped in whisked eggs? Yep! you guessed right…..”Yamarita” is what happens…lol! i still wonder how this name was coined but i must admit, it does sound catchy. Most times, i often remember to make Yamarita whenever i want to recycle leftover boiled yam from the previous days meal. Yamarita is a meal made from boiled yam dipped in whisked egg and then fried till golden brown. Most fast foods usually serve up hot Yamaritas on daily basis and i do see how people gush about it. Yamarita is often served with any Hot dipping sauce or stew. It’s also easy to make and straight forward as i’m about to show you in this quick tutorial….

Ingredients:
• 5 thick slices yam
• 2 eggs
• 1 cup flour
• 1/2 tsp ground chili pepper “Optional”
• 1 tsp. salt
• 1 cup vegetable oil for frying

Step 2: Cut the yam into thick length-wise strips. Rinse the yam with clean water to get rid of dirt and place in a medium sized pot. Add the salt and just enough water to cover the yam in the pot.
Step 3: Cook the yam for about 15 mins till soft. Drain the water from the yam and set aside to cool while you prepare the egg.
Step 4: Break the eggs into a small bowl, add a pinch of salt, whisk and set aside. Sift the flour into another small bowl, add the pepper and a pinch of salt, mix and set aside.
Step 5: Dip a slice of yam in the flour and coat all the sides by rolling the yam in the flour.
Step 6: Transfer the coated yam into the egg wash and turn to coat every side also. After coating with eggwash, transfer the coated yam to the frying pan with heated oil and leave to fry till golden brown over medium heat.
Step 7: Once fried, Scoop out from the pan and Leave to drain. Transfer to a plate and serve with Peppered stew, egg sauce or any type of stew depending on your taste.

Thanks Anon :). The normal white flour sold in the market is wheat flour. Do you mean "wheat meal"?. i don't think when chin chin is baked it'd give you the same result as when it's fried so i wouldn't recommend baking chin chin (That's more like making cookies). But if you insist, you could use the Baking without an oven method HERE. Hope this helps.
U can cos a friend uses wheat flour for her pancakes. D wheat flour doesn't look like d normal everyday plain flour. Not sure au to describe it.
There's actually a wheat flour used for pastries and its quite different from d wheat meal used in making swallow. U can ask from the sellers in d mkt
O! You actually meant 'Whole – wheat flour' (light brown) used for baking, which contains the bran due to the mixture of both the 'wheat flour'(white) and 'wheat meal'(brown). Sure you can use this (Though, you won't get your average 'normal' chin chin taste). Thanks for the clarification Quin & Anon 9:30pm.

yes you can skip the flour though you won't get enough egg coat on the yam as you'd get with flour
