I woke up this morning with a huge craving for Pancakes. This was because it had been quite a while since i prepared pancake rolls . You’d have to agree with me that nothing screams “Its Saturday!!!!!!!” like a stack of pancakes with a cup of hot beverage by the side. Sometimes, I like my pancakes in form of crepes with savory fillings, other times I luv ‘em with syrups………Yum! Crepes are thin pancakes made from wheat flour. One good thing I love about crepes is, they can be filled with just about anything. I filled these crepes with the Shredded smoked fish stir fry I taught you how to make in my previous post. Hope you like 🙂
Homemade Crepe recipe
•Prep time: 10 minutes
•Cook time: 30 minutes
•Total time: 40 minutes
•Makes: 14 Crepes
Ingredients
•1 tbsp. Butter/ Margarine – Optional: Vegetable oil
•500g Flour
•2½ tbsp. Sugar
•1 tsp. Salt
•3 cups Water
•2 eggs
Directions
1. Crack the eggs into a small bowl and whisk lightly; Set aside
2. Mix the dry ingredients together in a bowl and add the water into the dry ingredients – mix till you get a smooth, runny batter. This is to ensure the batter is spreadable on the cooking surface of the pan. Once you get a smooth batter, gently pour in the whisked eggs and mix further
3. Heat a non-stick frying pan and add a trace of butter; Spread evenly over the cooking surface.
4. Pour in two cooking spoons full of the batter and swirl to spread evenly. Cook for 1 minute and flip over for a further 30 seconds.
5. Transfer to a flat plate and repeat the process till the batter is used up.
6. Stack them up, fill with the Smoked fish stir-fry & roll up.
7. Serve

Wow! lovely as always. i love pancakes too but with cabbage included
I stumbled on your blog and since then I've been ham! Tried one of your recipes "the chicken gravy sauce" and it scored me a lotta points with my family, being known as the anti-kitchen one.
You're doing a great job, you take time to explain each step thoroughly with images to relate to each step and that makes you a lot different.
However, on this post, you didn't specify the size of cup (for the water) or better still the quantity of water in mls.

Thanks for the compliments. I'm so sorry for not specifying the exact measurement in mls earlier on. I use a calibrated cup so I assumed using the cup would be easier since it's the standard unit of measurement for Volume (Fluids & Bulk matter).
Measuring cups:
1 cup = 250ml
1/2 cup = 125ml
1/3 cup = 80ml
1/4 cup = 60ml

Wats d difference btw crepes and pancakes? Also, U did not add milk, any reason?
Crepes are very thin Pancakes usually made from a thin batter. Pancake is thicker and it contains rising agents such as baking powder/ baking soda. I ran out of milk when i prepared these crepes but there was little or no difference though. Thanks for reminding me to add that :D.

Chai! Dobby what have I done to you? And it's usually when am returning from Hungary that I read this tempting posts. I must try this with that fish filling I so love, thank God it came at a time we're expecting visitors. What type of beverages do you suggest I serve this with for breakfast?
For breakfast, you can serve pancakes with dairy drinks, Juices Or hot drinks, such as tea and coffee.
Reminds me of chapati, I learnt from a Tanzanian, dsnt need egg n U can hv it with aby filling.
Just learnt Indians eat it too.
