I know i’ve said this countless times but i doubt if i’d ever get tired of saying baking is one of my major hobbies. Apart from cakes, i love making biscuits too. One of my favorite biscuits is the scottish shortbread. It tastes so good yet so easy to make at home. The ingredients for this all butter biscuit is simply basic but the end result is one you wouldn’t forget in a hurry.
For most of my home baking, i use mostly butter which could be quite expensive although worth every penny but when butter is not available i end up using margarine which doesn’t give me the desired flavor and taste i need.
Today i’d be showing you how to make the ORIGINAL shortbread biscuit which would make you wonder why you’ve been spending lots of Naira on the store bought ones. Most times, i make shortbread for Christmas, birthdays or special occasions as gifts and the compliments seem to pour in endlessly. For the rice flour, i milled ordinary raw rice till smooth. Please do not use margarine for this as the results are totally different. Also, do not add anything extra such as flavorings if you want the real shortbread taste you’ve grown to love. if you don’t have an oven to bake this in, use this Method

How to make Shortbread Biscuit
• Prep Time: 30 mins
• Bake Time: 1 hour

• Makes : 18-21 shortbread biscuits
Kitchen Notes:
• While butter is made from real milk fat (Animal fat), margarine is made from Hydrogenated vegetable oil.

Lol! i know the feeling. The first time i tried it with margarine, it was used to decorate the kitchen cabinet for a month. No one could even touch it with a long pole before it was thrown away…lol!. The next time, i used butter, it finished within 20mins and i had to make three batches more that same day to satisfy everyone around.
i used elle & vire salted butter (Would put up the picture). There are other good types also such as kerrygold and president butter.

So I just spent 2€ on a pack of short bread!!!! Why I didn't see this before I dove into the afro shop is head banging! Lol. I'm shocked it doesn't contain milk. And wondering why I never thought to search for a recipe. Its great and I would try it one day. Will skip the rice flour tho.

Yes you can use the dry mill (Smaller part of the blender) if it's strong enough or a commercial mill. It has to be ground smooth like powder.

Hi anon, 'Blue band' used to eat bread in naija is 'Margarine' and not butter.
Butter is usually sold in supermarkets refrigerated and a 200g stick/pack as shown in the picture above sells for about 450-500naira or more depending on the brand. Please don't use margarine for this.

Hi deborah, for the normal shortbread you cannot add flavours. you could use granulated sugar if you don't have icing sugar but you have to cream well till it dissolves. if you are not using salted butter, it's advisable to use a little bit of salt.

Thanks Anon. Yes it was still in the nylon while flattening with the rolling pin. The nylon was only removed and discarded when it was about to be cut.

Please Ada can you covert. The 150g to our everyday cup measurement that we use for(measuring like garri or rice).
Wheat flour also known as plain flour and also all purpose flour is the most common flour sold everywhere. you can get it in the local markets or supermarkets.

If you use a pot and stove, you could leave it for about 45mins-1hr as long as the stove burner is on blue flame (medium heat) all through.

yeah i know it's surprising right :). It tastes just like it's got milk in it because of the butter (it's made from milk). No you can't use TOPPER for shortbread because Topper is infact Margarine and not Butter.

Yes Anon, if you skip rice flour you'd need to make up the measurement meant for rice flour with wheat flour

hi dobs, finally made me sum shortbread last nyt. was so pissed wen i tried gettn sum yestee morn for breakfast and the price had increased to almost 500 naira (cedi to naira conversion)– u shd hv seen my contorted face. i just decided to do it, or forever hold my peace. im glad i did……… had sum wif tea this morn. though the sugar was just a lil too much and it browned up too. im sure my next set would be perfecto!!!!!!!. medeaase paa….

Thanks Anon. Scoring is making patterns to influence the shape of the cut you intend making. In pastries it is also used to describe the cuts made in before baking to allow air escape from the pastry.

Yes you can substitute with cornflour or even make this without it. The reason rice flour is used is to give it the crunchy grainy feel shortbread usually has. Yes plastic bag is the normal waterproof transparent nylon (esp. the type used in wrapping swallow). you're welcome.

I am glad i found your website.Between, of all the nigerian blogs that have put out the pictures of their final shortbread, it is yours that has the best taste appeal and even looks better that the original shortbread we know. Now, i have a get together and plan on making up to 90 pieces of biscuits. Would you suggest that i multiply the ingredients you have used by 5 since yours make up to 18. My next question is, what outcome will i get should i reduce the wheat flour to 125g instead of 150. Also can i use ground rice?. I assume you grind your rice with the nut grinder attached to a blender which we normally use to blend egusi orogbono?. Do you have a brand of icing sugar you use?. Thank you

– Yes i'd suggest you multiply the ingredients by 5 to make 90 biscuits or More to have extra.
– if you reduce the quantity of wheat flour, you might end up with a softer dough which could be difficult to mold. Also, the final quantity of biscuits would be reduced.
– Yes you can use ground rice. i use the small mill that comes with the normal blender to grind raw rice.
– i use millers icing sugar.

u mean even if ah wasn't using an oven i wouldn't need to cream the pan surface with butter?
Usually, Shortbread doesn't stick to the pan. But if your pan sticks, its best to use parchment paper to line the pan before baking. If you don't have parchment paper, use very little butter to rub the surface.

I just have a few questions on the shortbread and measurements
1. Concerning the rice,do i wash and dry before I blend it? (the rice might have and in it… not sure)
2. For the gram and cup measurements,i'm still confused when you say milk cup,do you mean the regular liquid milk container?
i don't have measuring spoons or cups, is there anyway i can measure it using the the regular tin tomato containers,i.e the small N30-N40, Medium N100-130, Big N200?

1) To be pre-cautious, yes you can.
2) Yes the milk cup i'm referring to is the regular milk saturated milk container. You could just buy the 160g saturated milk since that's what is mostly used in measuring. They sell it presently for about 100-160 depending on the type.

Yes you can use the pot method for this. You can also use a round baking pan to place the biscuits to be baked. Also you can either use an aluminum plate as a stand or small gravel stones to place the baking pan. Hope this helps.

I tried this but it didn't work out. There was something wrong which I can't place what it was. It turned out not to be thick and still sticky so I kept adding flour and I had to use up the whole butter. 😟😟😟😳

hii Dobby, how do i know the temperature of my oven to be exactly 375*F as my oven is gas and doesnt have a temperature knob just low, medium , high knob marking? is their another way to get the right temperature here?
Hi Bethel, you might need to get a thermometer or simply wait for the oven to get hot before popping the tray in the oven.

Please while I was using rolling pin on my shortbread, it was breaking. It wasn't perfect smoothness. What's wrong, what do I do.
It could stay for over a week without preservatives as long as it remains in an air tight container.
You didn't use a plastic bag as stated Treasure. It's very necessary.
Use a plastic nylon to roll it. It won't break.
Please how do u roll the dough with the nylon, won't it get torn in the process? Or do u place the nylon on the dough and roll?
Also do u wash the rice and allow to dry before milling, will it affect the taste.

I have just used TOPPER and it was unbelievably fantastic. Everyone in my house is drooling over it. No more buying expensive shortbread biscuits.
Btw, Topper is margarine but it is the closest to real butter than other margarines out there…. Reason why bakers use it.
Another thing is i didnt have buy icing sugar, i just milled my granulated sugar.
